How To make Swedish Pancakes
1 Egg
3/4 c Milk
1/4 ts Salt
1/2 c All-purpose flour
1 t Baking powder
1 tb Sugar
2 tb Butter,melted
Lingonberry jam Dairy sour cream
Over medium heat,preheat platter pan(cast iron or cast aluminum Swedish pan with shallow,round indentations for making thin pancakes about 3" in diameter).In large bowl,beat egg;stir in milk,salt,flour,baking powder and sugar until batter is smooth. Stir in melted butter.Grease cups in hot pan with shortening or butter.Spoon 2 rounded tablespoons batter into each greased cup. Cook about 1 minute on each side or until golden brown.Serve immediately with jam or jelly and sour cream.Makes 20 pancakes.

Thankfully you don't have to be Swedish to make or enjoy this scrumptious brunch option. We first ate these pancakes with my husband's best friend who actually is Swedish. They are a lot easier to make than I had originally thought, even easier than regular pancakes! But there's even more fun....with the toppings. Real lingonberries are the most legit, but if you don't have any....jam or other berries work well too. Nutella is a hit with just about anyone and since they roll up nicely, they actually travel well and are a good finger food. If you're feeling some health guilt, throw in some fruit to go with it. Our other creations included....peanut butter and banana, cinnamon and sugar, and maple syrup. Later we decided chocolate chips thrown in while still on the skillet would also be delicious. Just make sure to include lots of butter....and sprinkle that icing sugar on top for a professional finish! Avnjuta!
