Smörgåstårta (Swedish Sandwich Cake) is so delicious! ???? It can be made using cooked shrimp, ham, egg and cheese. It's a perfect dish for parties and other events. Today I'll be making a Smörgåstårta with egg and cheese. Here is the step by step process...
LAYERS & FILLING:
1/2 cup Mayonnaise
1 1/2 cup Sour Creme
2 tablespoon Parsley Flakes
2 tablespoon Dill
2 tablespoon Red Paprika Powder
2 teaspoons Black Pepper
1 teaspoon Salt
(Season to taste)
6 Hard-Boiled Eggs cooled and finely chopped
1 1/2 cups Gouda Cheese grated
1 cup Pickles finely chopped
500 grams Soft Crustless Sandwich Bread
Mix mayonnaise, sour creme and seasonings (add more seasonings to taste in necessary).
Divide mixture in half. Add chopped eggs to one half of the creme mix. Add grated cheese and finely chopped pickles to the other half. Place one layer of bread slices on serving plate or tray. Spread egg-creme mix on first layer, stopping approximately 1/2 inch from the edges (the creme will spread as the layers form). Cover with bread slices, pressing gently. Spread pickle-cheese mix onto second layer cover with bread slices pressing gently. Repeat (to get a total of 2 separate layers of egg and 2 layers of cheese).
TOPPING & GARNISH:
1/2 cup Whipping cream
1/4 cup Mayonnaise
2 cup Carrots very finely grated
1 Tomato large & firm
1 Large Seedless Cucumber sliced thinly lengthwise
1 Cup Seedless Green Grapes
1 Cup Seedless Red Grapes
1/2 cup Gouda Cheese grated
1 teaspoon Dill
Whip the cream, and gently fold in mayonnaise.Cover sides and top of the cake with this cream mixture.Garnish sides and top outer edges (1 1/2 inch wide) with finely grated carrots, patting firmly. (TIP: Thin layer of carrots, but it should hide the creme completely)
Tomato Rosette: Using a peeler remove the skin of a large firm tomato in a strip(s). Create a tomato rosette by rolling the strip(s).
Cucumber Rosettes: With a slicer, cut thin long strips of cucumber lengthwise. Cut strips in half lengthwise, then roll to form rosettes. TIP: Place the edges of the rosette inward.
Garnish top of Smörgåstårta with tomato rosette, cucumber rosettes, and alternating sliced grapes, pressing firmly (but not too hard ????). Cover the remaining area with grated cheese and dill.
Smörgåstårta can be eaten as a meal, or sliced thinly to enjoy with other dishes at parties or other events. Store leftovers covered in the refrigerator for a day or two. Enjoy!

Easy Cookies (Swedish Strips got some interesting choices - non baking lol)
First recipe for my 2023 Christmas Baking! Sweet with a shortbread cookie base, strawberry jam and chopped nuts give a Christmas Season look to these squares. A recipe with lots of variations. Makes a generous 12x15 (30 cm x 38 cm) pan of squares, diamonds or strips (depends on how you cut them). Recipe follows:
Swedish Strips
Preheat oven to 350°F (175°C)
Bake for 15 minutes
Ingredients
1 cup (227 gm) butter
1 cup (250 ml) brown sugar
1 egg
1 teaspoon (5 ml) vanilla
1/2 teaspoon (2 ml) salt
2 cups (300 gm) all purpose flour (in Canada) USA and UK strong flour or bread flour
1/2 cup (125 ml) jam cherry, strawberry, raspberry - your favourite
2 Tablespoons (30 ml) icing sugar (confectioners sugar)
1/2 cup (125 ml) finely chopped nuts - pecans, walnuts, almonds - your favourites
1/2 cup (125 ml) chopped mixed peel - optional
You can use your stand mixer, hand held electric beater or do the mixing by hand with your wooden spoon
Cream sugar and butter until light and fluffy. Add egg, vanilla and salt, mix well. Add flour and combine.
Place cookie batter on an ungreased 12”x15” (30 cm x 38 cm) cookie sheet. Pat with your hand into a thin layer covering all the cookie sheet (layer should be about 1/4” 1/8 cm thick).
Prepare your toppings so they are ready to add as soon as the cookie comes out of the oven.
Bake in a preheated oven to 350°F (175°C) for 15 minutes. Cookie should be golden brown and fully cooked.
While the cookie is hot, spread thinly with jam, nuts and other toppings. Press nuts and other toppings gently into the hot cookie. Dust with sifted icing (confectioners) sugar. Cut immediately into 1” wide strips and make the other cut at 1” or 1.5” (.5 cm or .75 cm) or make a bar cookie at 1”x3” (.5 cm x 1 cm). Ready to serve as soon as they cool. Yummy sweet treat!

40 Minuten bei 200 °C / 390 °F . backen
120 g (1 Tasse) Gruyère-Käse
1 Tomate
Weitere 10 Minuten bei 200 °C / 390 °F backen und 2-3 Minuten grillen (optional)
