INGREDIENTS: (2 servings)
2 large chicken breasts
5-6 cloves garlic (minced)
2 cloves garlic (crushed)
1 medium onion
1/2 cup chicken stock or water
1 tsp lime juice
1/2 cup heavy cream (sub fresh cream)
Olive oil
Butter
1 tsp dried oregano
1 tsp dried parsley
Salt and pepper (as needed)
*1 chicken stock cube (if using water)

FAQ:
• Why lime juice?
As wine is not used in this recipe, lime juice is added for acidity (sourness). Otherwise the sauce might seem too rich
• When to add salt to the sauce?
Add salt towards the end as stock/stock cubes have added salt. I did not find the need to add more salt
• What else can be added to the dish?
Mushrooms, broccoli, bacon, spinach and parmesan cheese can also be added for additional flavor
• What to pair with the dish?
Pasta, steamed veggies, mashed potatoes, rice, couscous or crusty bread.

TIPS:
• Chicken stock can be substituted with white wine as well. Omit lime juice if using white wine
• The entire sauce needs to be cooked on low flame so as to prevent it from splitting
• Reduce the liquid before adding cream
• Add 1/4 cup parmesan cheese to add more flavor

Step 1: Make the Dough
Ingredients
* 1c. and 1 Tbsp 00 Flour
* 1c. and 1 Tbsp AP Flour
* less than 1c. Warm Water
* 1 tsp Salt
* ¾ tsp Active Dry Yeast
* 1 tsp EVO
* Extra AP flour for shaping
* Veg oil or pam
1) Combine water and yeast, then flours, salt and evo and stir on low until combined. Let rest 15 minutes
2) Knead for 3 minutes
3) Proof for 3 hours under plastic wrap and oiled bowl.
4) Shape to desired size, adding flour as necessary

Step 2: Make the Kebab Meat
Ingredients
* 1 lb ground pork
* 1 tablespoon paprika
* 1 tablespoon dried oregano
* 1 teaspoon dried basil
* 1 teaspoon thyme
* 1 teaspoon black pepper
* 1 teaspoon cumin
* 2 teaspoons salt
* 1 cup yogurt
1) Mix together the meat with the yogurt and spices.
2) Place in a pan and bake at 400 degrees for 90 minutes.
3) Slice the meat thin and crisp in a pan

Step 3: Make the Pizza Sauce
Ingredients
* Tomato Paste
* Canned Tomato Sauce
* Garlic Powder
* Onion Powder
* Oregano

1) Combine everything and let simmer for 1 hr - add water as necessary

Ingredients
* ½ c. Mayo
* ½ c. Sour Cream
* 3 tbsp Plain Yogurt
* 2 tbsp Sambal Oelek
* 2 tbsp Pineapple Juice
* 1 tbsp Pepperoncini minced
* 1 tbsp Garlic minced
* 1 tbsp Cucumber minced
* 2 tsp Oregano
* ½ tsp MSG
* AN Salt
1) Combine and adjust as needed

* Shredded Mozzarella Cheese
* Kebab Sauce

1) Vent dough with fork
2) Lay small amount of sauce and cheese
3) Kebab meat next
4) Bake at 400F until done
5) Squeeze bottle kebab sauce in concentric circles

Easy Cookies (Swedish Strips got some interesting choices - non baking lol)
First recipe for my 2023 Christmas Baking! Sweet with a shortbread cookie base, strawberry jam and chopped nuts give a Christmas Season look to these squares. A recipe with lots of variations. Makes a generous 12x15 (30 cm x 38 cm) pan of squares, diamonds or strips (depends on how you cut them). Recipe follows:
Swedish Strips
Preheat oven to 350°F (175°C)
Bake for 15 minutes
Ingredients
1 cup (227 gm) butter
1 cup (250 ml) brown sugar
1 egg
1 teaspoon (5 ml) vanilla
1/2 teaspoon (2 ml) salt
2 cups (300 gm) all purpose flour (in Canada) USA and UK strong flour or bread flour
1/2 cup (125 ml) jam cherry, strawberry, raspberry - your favourite
2 Tablespoons (30 ml) icing sugar (confectioners sugar)
1/2 cup (125 ml) finely chopped nuts - pecans, walnuts, almonds - your favourites
1/2 cup (125 ml) chopped mixed peel - optional
You can use your stand mixer, hand held electric beater or do the mixing by hand with your wooden spoon
Cream sugar and butter until light and fluffy. Add egg, vanilla and salt, mix well. Add flour and combine.
Place cookie batter on an ungreased 12”x15” (30 cm x 38 cm) cookie sheet. Pat with your hand into a thin layer covering all the cookie sheet (layer should be about 1/4” 1/8 cm thick).
Prepare your toppings so they are ready to add as soon as the cookie comes out of the oven.
Bake in a preheated oven to 350°F (175°C) for 15 minutes. Cookie should be golden brown and fully cooked.
While the cookie is hot, spread thinly with jam, nuts and other toppings. Press nuts and other toppings gently into the hot cookie. Dust with sifted icing (confectioners) sugar. Cut immediately into 1” wide strips and make the other cut at 1” or 1.5” (.5 cm or .75 cm) or make a bar cookie at 1”x3” (.5 cm x 1 cm). Ready to serve as soon as they cool. Yummy sweet treat!
