How To make Swiss Fondue 1
1/2 Garlic Clove
1 2/3 c Dry White Wine
1 lb Gruyere Cheese, Grated
2 ts Cornstarch
1/4 c Kirsch (Or More)
Nutmeg To Taste, Grated 2 French Bread, In 1" Cubes
Rub the inside of a heavy saucepan with the garlic, add the wine and heat it over mod-low heat until it is hot. Add the cheese by handfuls, stirring. Cook the mixture, stirring, until smooth, keeping it just below simmering point. In a small bowl, stir together the cornstarch and 1/4 cup kirsch. Mix well and add to the Gruyere mixture with nutmeg and pepper to taste. Heat, stirring constantly, just until it begins to bubble. Do not let it boil. Transfer to a heated fondue pot and keep it hot over a low flame. If fondue becomes too thick, add some additional kirsch to thin. Spear bread cubes with long fondue forks and dip them into the cheese. a 1967 Gourmet Mag. hippy-dippy favorite.

Cheese Fondue Recipe | Good Housekeeping UK
The ultimate sharing treat to use up your leftover Christmas cheeses. Remove any rinds before melting, to ensure your fondue is smooth and creamy!
Ingredients:
1 tbsp. cornflour
300 ml (10 fl oz (½ pint)) dry white wine
1 large garlic clove, crushed
300 g (11oz) grated Gruyere cheese
100 g (3 ½oz) stilton, chopped
200 g (7oz) brie, chopped
FOR DIPPING:
Pigs in blankets
Roast potatoes
Crusty bread
Cornichons
Directions
In a fondue pot or heavy bottomed saucepan whisk the cornflour with the white wine and garlic, then cook over medium-low heat.
Add the cheeses, a handful at a time, and whisk in to melt. Bring to a gentle bubble and continue to whisk until smooth and thickened. Transfer to a warmed serving dish or pan and serve with pigs in blankets, potatoes, cornichons and crusty bread on the side for dipping.

How to Make a Swiss Gruyere Cheese Fondue
In this video, James Schenk will teach you how to make an authentic Swiss cheese fondue using Gruyere.
You'll need a cheese fondue set and per person:
- 100 ml White Wine
- 200 grams Swiss Gruyere or 100 grams Emmental & 100 grams Gruyere
- 1 Garlic clove or more to taste
- 1 teaspoon of corn starch
- 1 small glass of Kirsch (25 to 50 ml)
- Pepper
- Paprika
- Nutmeg
- Italian Herbs/Basil and Oregano (if desired)
- White or Rye bread

2 1lb blocks swiss cheese
