Spicy Szechuan Noodles with Garlic Chili Oil
Hi food friends! Today's recipe is Spicy Szechuan Noodles with Garlic Chili Oil! ????????️
These are wide noodles tossed in a spicy, garlicky Szechuan chili oil sauce made with garlic, Szechuan chili peppers flakes, soy sauce, and fresh herbs. Best of all, it's ready in 10 minutes which makes this the perfect meal for busy nights.

Ingredients:
▢ 2 servings of wheat noodles
▢ 1 stalk scallion - chopped
▢ handful cilantro - chopped
▢ sesame seeds - for garnish
Szechuan Garlic Chili Oil Sauce
▢ 3 cloves garlic - minced
▢ 1 to 2 Tablespoons Szechuan chili flakes - or to taste
▢ 3 Tablespoons vegetable oil
▢ 1 Tablespoon dark soy sauce - sub with regular soy sauce
▢ 1 ½ teaspoon Chinese black vinegar - sub balsamic vinegar
▢ ½ teaspoon ginger - grated
▢ ¼ teaspoon salt - or to taste
▢ ¾ teaspoon sugar - (optional)
Optional for more spice
▢ 1 teaspoon Lao Gan Ma Spicy Chili Crisp
▢ 1 teaspoon hot chili oil
▢ finely chopped Thai chilis

It is such a food item that it can be made it into different varieties according to one's liking and taste, be it vegetarian, non-vegetarian, simple, flavourful, ramen, etc. The list simply goes on. Here, we are trying a restaurant style Schezwan Noodles. This variant is slightly spicy but very inviting. As the Schezwan Sauce can be incorporated in other dishes like fried rice and pastas, we're showing how to prepare the sauce from scratch and saving it for later use as well. — INGREDIENTS —
## For Schezwan Sauce ##
Dry Red Chilli (ഉണക്കമുളക്) - 60 gm
Hot Water (ചൂടുവെള്ളം) - 1 Litre (4 Cups)
Refined Oil (എണ്ണ) - ½ Cup
Finely Chopped Ginger (ഇഞ്ചി ചെറുതായി അരിഞ്ഞത്) - ¼ Cup (30 gm)
Finely Chopped Garlic (വെളുത്തുള്ളി ചെറുതായി അരിഞ്ഞത്) - ½ Cup (60 gm)
Finely Chopped Celery Stick (സെലറി ചെറുതായി അരിഞ്ഞത്) - ¼ Cup (30 gm)
Water (വെള്ളം) - 1 Cup (250 ml)
Vinegar (വിനാഗിരി) - 3 Tablespoons (45 ml)
Sugar (പഞ്ചസാര) - 1 Teaspoon
Salt (ഉപ്പ്) - 1 Teaspoon
## For Cooking Noodles ##
Water (വെള്ളം) - 1½ Litre (6 Cups)
Refined Oil (എണ്ണ) - 1 Tablespoon
Salt (ഉപ്പ്) - 1½ Teaspoon
Noodles (നൂഡിൽസ്) - 200 gm

Refined Oil (എണ്ണ) - 2 Tablespoons
Finely Chopped Garlic (വെളുത്തുള്ളി ചെറുതായി അരിഞ്ഞത്) - 1 Teaspoon
Cabbage (ക്യാബജ്)
Carrots (ക്യാരറ്റ്)
Capsicum (കാപ്സിക്കം)
Green Beans (ബീൻസ്)
Spring Onion Bulb (white part)
Spring Onion Greens (green part)
Tomato Sauce (ടുമാറ്റോ സോസ്) - 1 Tablespoon

These Hakka noodles can be a bit tricky to make, but they taste so so good. And once you learn how to make them, you can’t unlearn.
I had almost given up on making these after a million failed attempts. I thought I’ll just stick to Maggi ????
But reattempted them recently and they turned out so yum. So here’s the recipe with a few tricks and tips.
Ingredients I used:
- 2 packets of noodles + water for boiling
- 2 tbsp oil
- 1 tbsp ginger, finely chopped (no kanjoosi)
- 1 tbsp garlic, finely chopped (no kanjoosi)
- 1 to 2 green chillies or as preferred, sliced
- 1/3 cup regular onion + spring onion stems, sliced
- 1/3 cup cabbage, sliced
- 1/3 cup carrots, sliced
- 1/3 cup capsicum, sliced
- 1 tsp soy sauce
- 1 tsp vinegar
- 2 to 3 tbsp schezwan sauce (or as preferred)
- salt to taste
- spring onion leaves, finely chopped
TIPS:
~ Keep flame high throughout the cooking process.
~ But be careful not to overcook or burn the ingredients.
~ Do NOT overcook the noodles. Cook them till they’re just done because they will continue to cook once you toss them with veggies.
~ Keep tossing.
~ Use a big wok/kadhai.
~ Add all veggies together, including onions. Unlike Indian dishes, onion don’t go in tadka. Do not cook them till they change colour. Add them with other veggies and toss for 2 mins on the clock on a high flame.
Procedure:
- Heat oil in a big wok/kadhai. Add ginger, garlic and green chillies. Fry for 1 min.
- Add veggies and fry for 2 mins. Add all sauces as mentioned above and the cooked noodles, and spring onions.
