Sichuan Cold Noodles, Street Food style Liang Mian Recipe (川味凉面)
A great summer dish, this Sichuan street snack can be found throughout China. It's got a nice sweet, sour, and savory sauce with an optional spicy kick.
If you're familiar with this dish, we add spices to the soy sauce here - not everyone does this, often you'll just see sweetened soy sauce. The whole essence of this dish is that there's tons of variations, and this is the one we prefer :)

It is such a food item that it can be made it into different varieties according to one's liking and taste, be it vegetarian, non-vegetarian, simple, flavourful, ramen, etc. The list simply goes on. Here, we are trying a restaurant style Schezwan Noodles. This variant is slightly spicy but very inviting. As the Schezwan Sauce can be incorporated in other dishes like fried rice and pastas, we're showing how to prepare the sauce from scratch and saving it for later use as well. — INGREDIENTS —
## For Schezwan Sauce ##
Dry Red Chilli (ഉണക്കമുളക്) - 60 gm
Hot Water (ചൂടുവെള്ളം) - 1 Litre (4 Cups)
Refined Oil (എണ്ണ) - ½ Cup
Finely Chopped Ginger (ഇഞ്ചി ചെറുതായി അരിഞ്ഞത്) - ¼ Cup (30 gm)
Finely Chopped Garlic (വെളുത്തുള്ളി ചെറുതായി അരിഞ്ഞത്) - ½ Cup (60 gm)
Finely Chopped Celery Stick (സെലറി ചെറുതായി അരിഞ്ഞത്) - ¼ Cup (30 gm)
Water (വെള്ളം) - 1 Cup (250 ml)
Vinegar (വിനാഗിരി) - 3 Tablespoons (45 ml)
Sugar (പഞ്ചസാര) - 1 Teaspoon
Salt (ഉപ്പ്) - 1 Teaspoon
## For Cooking Noodles ##
Water (വെള്ളം) - 1½ Litre (6 Cups)
Refined Oil (എണ്ണ) - 1 Tablespoon
Salt (ഉപ്പ്) - 1½ Teaspoon
Noodles (നൂഡിൽസ്) - 200 gm
