Hi guys. Today was a super busy day and I needed a quick and easy dinner. So...I made Taco Casserole. :)
Taco Casserole
1 pound ground beef
1/2 tablespoon butter
1 medium onion, diced
2 jalapeno peppers, seeded and diced
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 packet taco seasoning
3/4 cup water
14.5 ounce can diced tomatoes, undrained
14.5 ounce can of rotel
1 1/4 cups corn chips
16 ounce can refried bean
15 ounce can kidney beans
2 cups of cheese
Brown ground beef with onion and peppers. Stir in taco mix, water and diced tomatoes, do not drain.
Set aside. Stir together refried beans, rotel and kidney beans.
in a 9x13 baking dish, start by crush corn chips in the bottom to create a crust layer. Next, add the bean. Next add the meat. Next add the cheese. Bake at 375 for 15 minutes. Garnish with lettuce, tomatoes, black olives and green onion. Enjoy :)

Taco Casserole | One Pot Chef
Taco Casserole is a simple main dish, perfect for easy weeknight dinners, Super Bowl parties or kid’s sleep overs. Lightly seasoned beef is combined with beans, onion, corn chips and cheese. Baked until bubbling then topped with sour cream and salsa dip, this gorgeous dinner will keep everyone happy - give it a go!

500g Beef Mince / Ground Beef
1 Small Brown Onion (chopped)
1 Tablespoon of Oil
400g Can of Diced Tomatoes
Can of Red Kidney Beans (drained and rinsed)
Can of Cream of Chicken Soup (or any soup you prefer)
1/2 Cup of Water
35g Sachet of Taco Seasoning
300g of Plain Corn Chips / Tortilla Chips (lightly crushed)
2 Cups of Grated Cheese
Sour Cream and Tomato Salsa Dip (for topping)
All measurements and temperatures are in Australian Metric.

Taco Squares Casserole
This taco squares casserole dish is like a Southwestern version of lasagna. Layers of beef, tortillas, and cheese come together to form cheesy goodness. Plus, it's a pretty quick meal to put together, which makes it perfect for a weeknight meal!

INGREDIENTS
- 2 lb beef
- 1 yellow onion
- 1 1/2 tsp salt
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp oregano
- 3/4 tsp garlic powder
- 1 28-oz can diced tomatoes
- 1 tbsp flour
- 12 corn tortillas
- 2 cups shredded cheddar cheese
INSTRUCTIONS
- Preheat oven to 350°F. Grease a 9×13 baking dish and set aside.
- Add the ground beef to a 12-inch skillet over medium heat. Break into small pieces, then add the onion and salt. Cook until the meat is browned and the onion is soft, 8-10 minutes.
- Once the meat is cooked, with the skillet still over medium heat add the chili powder, cumin, garlic powder, and oregano. Stir and cook for 1 minute and add the tomatoes. Bring to a simmer and cook for 5 minutes on low. After 5 minutes, sprinkle in the flour and cook for 1 minute. Remove from the heat and set aside.
- If a gas stove is available, char the tortillas. Turn a burner on low and set a tortilla on for 30 seconds until slightly blackened. Then flip, repeat, and then remove from the flame. Charing is simply an optional step. If not available, move on to the assembly.
- In the prepared baking dish, add 1/2 cup of the meat mixture and spread it over the dish. Add 6 tortilla shells, slightly overlapping and covering the bottom of the baking dish. Add half of the meat mixture and spread evenly. Then sprinkle with half of the shredded cheese. Repeat one time with the remaining tortilla shells, meat mixture, and cheese. At this point, the casserole can be covered with plastic wrap and stored in the refrigerator for one day before baking.
- Bake in the preheated oven until warmed through, 30-40 minutes. Once baked, remove from the oven, cut into squares, and serve with favorite taco toppings!

Cheesy Taco Bake | Delish
A new way to eat tacos.
DIRECTIONS
1. In a large skillet over medium heat, heat oil. Add onions and cook until soft, 5 minutes. Add ground beef and cook until no longer pink, 6 minutes. Drain fat.
2. Add garlic, cumin, chili powder, cayenne, fire-roasted tomatoes, sour cream, and water to skillet and stir until combined. Let thicken 5 minutes. Stir in cilantro.
3. In a casserole dish, place a layer of tortilla chips, ground beef mixture, and cheeses. Repeat until ground beef mixture is used up.
4. Bake until cheese is melted and tortilla chips soft, 20 minutes. Let cool 5 minutes before slicing and serving.

1 white onion, chopped
1 1/2 lb. ground beef
2 cloves garlic, minced
2 tsp. chili powder
2 tsp. ground cumin
1/4 tsp. cayenne
1 15- oz. can fire-roasted tomatoes
1/2 c. sour cream
3/4 c. water
1/4 c. freshly chopped cilantro, plus more for garnish
1 bag tortilla chips (I used restaurant style)
2 c. shredded Cheddar
2 c. shredded pepper jack
