How To make Tangy Grilled Chicken
1 Scotch bonnet or habanero
chile, stem and seed
finely chopped 1 Green bell pepper :
stem and
removed finely 1 teaspoon Dried thyme
1 teaspoon Worcestershire sauce
20 milliliters Garlic :
minced
2 Shallots minced
2 tablespoons Butter or margarine
3 tablespoons Tomato paste
1/2 cup Dry white wine
1/4 cup White wine vinegar
1 Chicken :
cut in serving-size
Combine the chile, bell pepper, thyme, and Worcestershire sauce and mix will.
Saute the garlic and shallots in the butter until lightly browned. Stir in the tomato paste, wine, and vinegar. Add the chile mixture, bring to a boil, reduce the heat, and simmer for 5 minutes. Allow to cool.
Marinate the chicken in the sauce for 3 to 4 hours in the refrigerator.
Preheat the barbecue. Arrange the chicken on the hot grill and cook, turning pieces often and basting with sauce.

Spicy Garlic Chicken Recipe:
Marination:
Chicken (Boneless cubes) - 300 grams
Ginger Garlic Paste - 1 tbsp
Lemon Juice - ½ no
Salt - ½ tsp
Black Pepper Powder - ½ tsp
Red Chilli Powder - ½ tsp
Other Ingredients:
Oil - 2 tbsp + 2 tbsp
Garlic (finely chopped) - 3 tbsp
Red Chilli Powder - ½ tsp
Black Pepper Powder - ½ tsp
Salt - ¼ tsp
Tomato Ketchup - ¼ Cup
Soy Sauce - 1 tsp
Water - ¼ Cup
Coriander leaves (chopped) - 2 tbsp
Cooking Instructions:
1. Marinate the chicken with all the required ingredients. Set aside for 10 minutes.
2. Heat 2 tbsp oil in a pan. Add the chicken and cook for 5 minutes, flipping it occasionally. Set this aside.
3. Heat oil in another pan. Add the garlic and saute on medium heat until golden brown. Add water, red chilli powder, pepper powder, salt, ketchup and soy sauce.
4. Add the chicken and cook until the sauce coats the chicken well.
5. Garnish with coriander leaves and serve.

Gai Yang Thai Grilled Chicken BUT Oven Roasted | with Nam Jim Jaew Spicy Dipping Sauce
Today we're making Gai Yang or Thai Grilled Chicken, but baked or roasted in the oven. This is one of my favourite street food from Thailand and very easy to make at home with an oven.
I also include a recipe for the spicy, sour Thai dipping sauce, or Nam Jim Jaew, which I absolutely LOVE and consider a must have.

Ingredients:
- 600g or 4 Chicken Thighs, skin-on
- Marinade with:
- 8 cloves Garlic
- 1 Lemongrass, white inner core
- 2-3 Shallots
- 2 Coriander Roots or Stems
- 1 tbsp Light Soy Sauce
- 1 tsp Fish Sauce
- 1 tsp Dark Soy Sauce (or Kicap Manis)
- 1 tsp Black Pepper
- 1 tsp Brown Sugar (or Palm Sugar)
Toasted Rice Powder or Khao Kua:
- 1 tbsp of Glutinous Rice or regular Jasmine White Rice
Nam Jim Jaew/ Thai Dipping Sauce:
- 1 tbsp Fish Sauce
- 1 tbsp Brown Sugar (or Palm Sugar)
- 1 tbsp Tamarind Paste (or juice from 3 tbsps of Tamarind Pulp)
- 1 tsp Toasted Rice Powder or Khao Kua
- 1 tsp Chilli Flakes
- 1 tsp Lime Juice
- 1 tbsp Cilantro
- 2-3 tbsps Water

Chicken (Whole, with skin) - 1 no (around 1 kg)
Brine
Water - 750 ml
Salt - 2 tsp
Vinegar - 1 tbsp
Kashmiri Red Chilli Powder - 1 tbsp
Ginger Garlic Paste - 2 tbsp
Marination
Kashmiri Dry Red Chilli (de-seeded) - 20 nos
Coriander Leaves - 3 tbsp
Green Chilli - 1 no
Garlic - 10 cloves
Ginger - 1 inch
Black Peppercorn - 1 tsp
Onion - ½ no
Tomato Ketchup - 2 tbsp
Butter - 2 tbsp
Curd - 2 tbsp
Salt - 2 tsp
Black Salt - 1 tsp
Cumin Powder - 1 ½ tsp
Coriander Powder - 1 ½ tsp
Cardamom Powder - ½ tsp
Chaat Masala - 1 tsp
Lemon Juice - 2 tbsp
Garam Masala Powder - 1 tsp
Oil - 2 tbsp
Homemade Mayonnaise
Egg - 1 no
Garlic - 3 nos
Sugar - ¼ tsp
Salt - ¼ tsp
Lemon Juice - 1 tsp
Oil - ½ Cup
Instructions:
1.Make slits on the thicker parts of the whole chicken, especially the breast and legs.
2.In a bowl, mix together all the ingredients for the brine until everything is dissolved. Add the chicken and refrigerate for at least 30 minutes, or ideally for 2 hours.
Marination
3.For the marination, add the de-seeded Kashmiri chillies to a pot of boiling water. Boil for 5 minutes or until the chillies are tender.
4.Add it to a blender along with all the other ingredients for the marination. Blend it to a smooth paste.
Other Steps
5.Take the chicken out of the brine and pat it completely dry using a cloth or thick paper towels.
6.Apply the marination all over the chicken and inside it too.
7.Marinate in the refrigerator for at least 1 hour, but preferably for 6 hours or overnight.
8.Preheat an oven to 220°c. Secure the legs and wings of the chicken by tying it with a twine or by using toothpicks.
9.If your oven has a rotisserie rod, insert the chicken through it and secure it tightly using the screws. If you do not have the rod, you can place it on a roasting rack and cook it.
10.Cook at 220°c for 10 minutes, then reduce the heat to 180°c and cook for 1 hour more.
Homemade Mayonnaise
11.To a small blender jar, add the eggs, garlic, salt, sugar and lemon juice. 12.Blend it for a few seconds to combine.
13.Drizzle the oil gradually in a thin stream while blending on low speed. Do not over-mix. Stop when the mayonnaise is thick. You can use more or less oil as needed.
