5 tb Butter
3/4 c Unsifted cake flour
1/4 c Confectioners' sugar
1 ts Grated lemon peel
Mix butter with flour, confectioners' sugar and lemon peel until combined. Divide dough in half; on floured surface, roll each half to a 6" long cylinder. Wrap each half in plastic wrap; refrigerate 1 hr. Preheat oven to 325. Grease large baking sheet. Cut each roll of chilled dough crosswise in 1/2" thick slices. Place cookies cut side up, on prepared baking sheet. Bake 12 min at 325 or until top of cookies are firm to the touch and are lightly browned on the bottom. With spatula remove to wire rack. Sprinkle cookie with additional confectioners' sugar before serving. -----

Ingredients :
— 9” inch tart tin
—200gm plain flour
—40gm icing sugar
— pinch of salt
—100gm cold chopped unsalted butter
—2 egg yolk
— A spalsh of cold water
** pre heated oven 175 C

Ingredients
—200gm plain flour
—40gm icing sugar
—80 gm coco powder
— pinch of salt
—100gm cold chopped unsalted butter
—2 egg yolk
— A spalsh of cold water
Step 2 :
Ingredients :
— 6 whole eggs
— 2 egg yolks
—140 gm caster sugar
— 150 gm double cream
—2 lemon zest
— 120 ml lemon juice
**pre heated ovan and set on 150 C
Method to follow:
STEP 1
To make the pastry, mix the flour and icing sugar in a bowl.
Rub the butter into the flour with your fingers until crumbly.
Mix in the egg yolks.
If the pastry is still too dry, add 1-2 tbsp water until it comes together.
Roll into a ball and divide in half (freeze one half for another recipe).
Flatten out the pastry with your hands, wrap the dough in cling film, then chill for at least 30 mins. While the pastry is chilling, make the filling.
Beat all the ingredients, except for the zest, together. Sieve the mixture, then stir in the zest.
STEP 2
Roll out the pastry on a lightly floured surface to about the thickness of a 1 inch coin, then lift into a 9” inch tart tin.
Press down gently on the bottom and sides, then trim off any excess pastry.
Stab a few holes in the bottom with a fork and put back in the fridge for 30 mins.

The French style lemon tart is type of lemon tart that uses a filling that is different than the straightforward Lemon curd as it contains cream and butter. ( as we do in France)
In this lemon tart ( tarte au citron) tutorial we will learn how to make a classic lemon custard cream (creme au citron). this particularly smooth filling and buttery filling goes very well with meringue too.
One great thing about that recipe is that the juice can be replaced by other Fruit juice such as orange or tangerines for instance which then transform that dessert into a Orange or Tangerine tart.( Note that in this case the sugar amounts have to be modified accordingly)

To make that delicious classic French style Lemon tart you will need the following ingredients:
- 1 pre-cooked tart shell made with around 200 grams of
homemade sweet shortcrust pastry.
For the Lemon custard cream filling:
- 300 ml of fresh lemon juice ( it has freshly squeezed juice)
- 150 grams of caster sugar ( to mix with the lemon juice)
- 100 ml of water ( optional)
- 3 whole eggs
- 3 eggs yolks
- 50 grams of caster sugar ( to mix with the eggs)
- 25 grams of corn flour.
- a few drops of vanilla essence
- 200 ml of heavy whipping cream
- 70 gram of butter

Important note: The quality of the ingredients in this recipe is paramount. The eggs, butter, cream and Lemon juice have to be fresh of the best quality.
- The lemon juice has to be freshly squeeze or your tart will not taste as it should.
- This version of the Lemon tart is a very Lemony version ( it will have a sharp lemon taste). However you can tone that down by replacing 100 ml of Lemon juice by water. ( so 200 ml of Freshly squeezed lemon juice mixed with 100 ml of water)
