Chef Kevin Belton's Pecan Chewies
April 14th is National Pecan day so Kev made Pecan Chewies. They are so easy to make and AMAZING!!
Pecan Chewies Recipe
Ingredients
1 cup butter melted
2 cups brown sugar
2 eggs
1 tsp. vanilla extract
2 cups all-purpose flour
2 tsp. baking powder
1 cup pecans, chopped
Directions
Preheat an oven to 375 degrees.
Prepare a 9 X 13 pan by spraying with a non-stick cooking spray or by greasing and flouring.
Mix melted butter and brown sugar in a large mixing bowl and stir until well combined.
Add the eggs and the vanilla and mix well.
Add flour, baking powder, and pecans to the butter and sugar and mix until there are no white streaks left of flour left. Make sure and scrape the sides of the bowl often.
Pour mixture into the prepared baking pan.
Place into the preheated oven and bake for 20 to 25 minutes or until the edges begin to brown.
Remove from the oven and allow to cool before cutting into bars.

In this video, we're going to share with you a delicious pecan pie recipe.
There are actually two parts to this keto pecan pie recipe—the crust and the filling. Take a look.
Pecan pie crust ingredients:
• 1 1/2 cups almond flour
• 1/4 tsp baking soda
• 1 1/2 tbsp butter, grass-fed and melted
• 1/4 tsp salt
• 1 organic egg
• 1/4 tsp vanilla extract
• 1 tbsp powdered sweetener
Note: Add the sweetener if you're making a pie crust. If you're trying to make a quiche, don't add it.
Pecan pie crust directions:
1. Mix all the ingredients into a food processor. Combine them until they ball up.
2. Dump into the pie crust and spread thin.
3. Wait for the crust to thicken so you can press it quite thinly around your pie plate.
4. Bake at 350 degrees for 8 to 10 minutes.
Tip: You can store this in the refrigerator for a couple of days if you want to make this in advance.
Keto Pecan Pie Recipe Filling Ingredients:
• 3 eggs, beaten
• 1 cup powdered sweetener
• 1 tsp vanilla extract
• 2 tbsp melted butter
• 1 cup Fiber Yum™ plus 1 tbsp maple extract, mixed well
• 1 1/2 cups raw pecans in halves
Directions:
1. Beat the eggs.
2. Mix all ingredients except for the pecans in a mixing bowl. Use a beater and combine until smooth.
3. Add the pecans and stir with a spatula until blended.
4. Pour into the pie crust.
5. Bake at 350 degrees for 45 minutes.
You don't have to wait for the next holiday season to enjoy this healthy keto pecan pie, you can enjoy it year-round!

Chocolate Pecan Cobbler
RECIPE COURTESY OF MATT PITTMAN
Ingredients:
2 pie crusts (rolled), softened
2 1/2 cups brown sugar
2 1/2 cups light corn syrup
1/2 cup butter, melted
4 1/2 tsps vanilla
2 cups chopped pecans
2 cups halved pecans
6 eggs, beaten
2 cups milk chocolate chips
Vanilla ice cream (optional)
Tools:
Cast Iron Dutch Oven
Whisk & Mixing Bowl
Directions:
- Prepare your smoker for a 45-50 minute smoke at a temperature of 350F. I recommend a light wood, pellet or lump charcoal for this cook.
- Spray a dutch oven, deep cast iron skillet or half sheet steam pan with butter flavored cooking spray or line with melted butter.
- Unroll one of the pie crusts. Lay it in the bottom of the pan and trim the excess to fit neatly. Top with the chocolate chips.
- Combine the vanilla, corn syrup, melted butter, brown sugar, and eggs, & chopped pecans in a mixing bowl. Whisk well.
- Pour half of the mixture into the pan.
- Unroll the 2nd pie crust. Lay it on top of the mixture.
- Smoke for 20 minutes. At this point check to make sure that top crust is slightly set to add the remaining filling. If not, let it cook for another 5-10 min.
- Pour remaining mixture into the pan & lay the pecan halves neatly on the top.
- Smoke an additional 30 minutes or until it looks done or set.
- Cool for at least 15 minutes. This is very important as this cobbler will burn the heck out of your tongue!
- Serve warm with vanilla ice cream, if desired.
