How To make Title: Cranberry Muffins
Servings: 12
2 1/4 c unbleached flour
1/4 c sugar
3/4 t baking soda
1/4 t salt
1 large egg
3/4 c buttermilk
1/4 c vegetable oil
1 c cranberry
1/2 c sugar
Sift together flour, 1/4 cup sugar, baking soda and salt into bowl. Combine egg, butter/sour milk and oil in small bowl; blend well. Add all at once to dry ingredients, stirring just enough to moisten. Combine cranberries and 1/2 cup sugar; stir into batter. Spoon batter into greased 2 1/2-inch muffin-pan cups, filling 2/3rds full. Bake in 400 degrees F. oven 20 minutes or until golden brow. Serve hot with butter and homemade jelly or jam.

Fresh Cranberry Orange Muffins with WW Flour and Flaxseed
Adapted from Eating Well Magazine circa 2007
1 1/2 cups fresh (or frozen) cranberries
1/3 cup ground flaxseed (I often grind my own in a spice grinder)
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup fresh orange juice
3/4 cup sugar (or less – think ½ cup would be fine)
1/4 cup vegetable oil (I used grapeseed)
1 large egg
1 teaspoon vanilla extract
1 tsp orange extract
1/2 cup chopped nuts of choice (I used pecans)
Preheat oven to 350
In a food processor, pulse cranberries until coarsely chopped.
In a large bowl, whisk together flours, flaxseeds, baking powder, baking soda, sugar and salt.
Make a well in your flours and whisk together egg and oil until blended (don’t fully mix into flours). Switch to a spoon or spatula and mix in orange juice and extracts. Stir until just combined. Fold in cranberries and nuts.
Divide evenly into a 12 cup muffin tin that has been generously greased. Bake 20-25 minutes until tooth pick comes out clean or muffins fully spring back when touched. Let cool 5-10 minutes before serving.

3 tablespoon butter
1/2 cup vegetable oil
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cup all-purpose flour
1/2 teaspoon salt
2 tablespoon baking powder
1/2 cup milk
2 dried cranberries
2 teaspoon orange zest
sprinkle with pure cane sugar
bake on 380 for 35 minutes

CRANBERRY NUT MUFFINS (MINI SIZE)
2 c unbleached white flour
¼ c wheat germ
½ c turbinado sugar
1 T Ener-G baking powder
2 T ground flax seeds
½ c chopped walnuts
1 tsp sea salt
1 tsp coriander
½ c cranberry juice
2 T canola oil
1 tsp vanilla
1 (14 oz) can whole berry cranberry sauce
30 pieces walnut halves
Preheat oven to 350 degrees. Mix all ingredients except cranberry juice, canola oil, vanilla, cranberry sauce and walnut halves. Add cranberry juice, canola oil, cranberry sauce and vanilla. Mix well. Transfer into an oil sprayed mini muffin pan. Put one (1) piece of walnut half on the top of each muffin. Bake for 30-35 minutes or until a tooth pick inserted in the center comes out clean. Cool for 5 minutes. Remove from pan. Cool complete on cookie rack.

2 Cups Bisquick
4 Eggs
2 Cups of Sugar
1/2 Sour Cream
2 Cups of Dried Cranberries
1 Can of Cranberry Sauce
1 Tablespoon of Vanilla
Add all dry and wet ingredients, mix well add cranberries and cranberry sauce mix again in a greased muffin pan fill each half way bake 15 a pre heated 400° until done. #lettuceeat
