Here is an easy, moist, soft, fluffy golden cornbread that's easy to make and honestly taste delicious.
My mother's cornbread became a hit at my little deli, as customers would come from all over town for a slice or two. I am so happy to be able to share this recipe with you and hope that you to will enjoy also. So from my kitchen to yours, here's Grammy's Cornbread! Yumm!

Grammy’s Corn Bread 1 1/4 cup Soymilk or coconut milk {1 tin} 1 1/2 cup Whole-wheat flour 1 1/2 cups Unbleached white flour 2 cup Cornmeal 2 tbsp. Rumford baking powder 2 tsp. Coriander 1 1/2 cups sugar 2/3 cup oil or 1 cup. Soy margarine 1 cups Shredded coconut 1 tsp Vanilla 1 1/2 cup Water 1 Apple, opt. Directions: In a large mixing bowl combine all dry ingredients. Add liquids and mix well. Pour in a pre- sprayed pan.
{If you are using the apple, simply blend it with your liquids and pour into the dry ingredients.} As well as you can simply add 1/2 cup of apple sauce, a ripe banana or simply ignore.
Bake at 350º F. for 1 hour.
