How To make Title: Bran Muffins In Waiting
Servings: 24
1 c warm water
2 1/2 c unbleached flour
1/2 c butter or margarine
2 large egg
3 1/2 c bran cereal
2 1/2 t baking soda
1 1/2 c granulated sugar
2 c buttermilk
Mix water with 1 cup cereal. Sift flour with baking soda. In a large bowl, beat butter until creamy. Add sugar 1/2 cup at a time, beating after each addition. Blend in eggs, one at a time, beating well after each addition. Scrape sides of bowl often. Stir in flour mixture 1/2 cup at a time, alternating with butter/sour milk, added 1/2 cup at a time also. Stir in soaked bran and the remaining bran cereal. Cover and store in refrigerator at least 6 hours before baking. To bake muffins, heat oven to 400 degrees F. Grease 2 1/2-inch Muffin Cups. Stir batter gently. Fill each muffin cup with about 1/4 c batter. Bake about 20 minutes, or until nicely browned. Remove from pan and serve hot with butter. Makes 6 cups batter or about 24.

Betty demonstrates how to make a nutritious lunchbox treat (or a healthy, energizing, quick snack for breakfast or before a workout), her Wholesome Cracklin' Oat Bran Muffins. These are filling, fiber-rich, not too sweet, and very tasty!
Wholesome Cracklin' Oat Bran Muffins
1 ¼ cups self-rising flour
2 tablespoons sugar
2 cups Cracklin' Oat Bran Cereal (You may use any type of bran cereal.)
1 cup milk
1 egg
3 tablespoons vegetable oil
cooking oil spray (or paper baking cup liners)
Stir together 1 ¼ self-rising flour and 2 tablespoons sugar. Set aside. Measure 2 cups Cracklin' Oat Bran cereal and 1 cup milk into a large mixing bowl. Stir to combine. Let stand for 20 minutes, or until cereal is somewhat softened. Add 1 egg and 3 tablespoons vegetable oil. Beat well with an electric mixer. Add flour and sugar mixture, stirring only until combined. Portion batter evenly into (12) 2 ½-inch muffin pan cups that have been sprayed with cooking oil spray. (You may use paper baking liners instead of spraying muffin cups.) Bake at 400 degrees for 15 to 20 minutes, or until lightly browned. (You may test for doneness by inserting a toothpick into the center of a muffin, and it should come out clean.) Remove baked muffins from the oven, let them rest a minute, and then place them onto a nice serving plate. They may be served warm, or you may let them cool and store them an airtight container. These are wonderful to pack in lunch boxes, in place of an unhealthy sweet treat. I think you will *love* them!!!

Okay - so maybe the title is a little misleading - I wouldn't say this is my HEALTHIEST vlog, but it IS the tastiest yet!
Here's the thing, I'm a big fan of not baking very often, but enjoying it when you do. Join Jared and me baking bran muffins and try the recipe for yourself! I tweaked the recipe from this video, but I'll also post the recipe below!
Recipe:
1½ cups 100% all bran cereal
1 cup buttermilk
1/3 cup coconut oil melted
1 large egg
2/3 cup honey
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Mix the bran and buttermilk together and let sit for 10 minutes. Then stir in the rest of the ingredients.
Bake at 450 degrees for 5 minutes, then lower to 350 (without opening the oven door) for 10 minutes.
VOILA!

Homemade Amish Bran Muffins Recipe
5 cups flour
5 tsp. baking soda
2 tsp. salt
2 tsp. allspice
3 cups sugar
4 eggs
1 cup oil
2 tsp. vanilla
4 cups (1 qt.) buttermilk
1 (20 ounce) box raisin bran flakes
Mix all of the ingredients together. The batter will be lumpy. Fill muffin cups 2/3 full or tin and bake at 375° for 20 minutes. The batter can be kept refrigerated for up to 6 weeks. Because these muffins include cereal as an ingredient, you should buy cereal on sale, use coupons or buy generic brands to keep it inexpensive.
I included this recipe because it keeps in the refrigerator a long time so it is great if you are short on time.
Makes 30-35 muffins.
