Easy Mixed Berry Muffin Recipe | Hannah's Baking Adventures
These mixed berry muffins are moist, fluffy, and refreshing with just the right amount of blackberries, cranberries, blueberries, raspberries, and a dash of cinnamon. Who doesn't love some delicious muffins that are easy to make and take no time at all! Comforting and light, I love to have them for breakfast, dessert, or in between snack!
Ingredients:
2 cups flour
1/2 cup sugar
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1 cup nonfat yogurt
2 eggs
6 tbsp flavorless oil
1/2 cup almond milk
1/2 cup frozen or fresh berries
1/2 cup dried cranberries
Instruction:
1. Whisk together flour, sugar, salt, baking soda, baking powder, and cinnamon.
2. Combine eggs, yogurt, oil, and milk. Add in the dry ingredients and mix until just combined.
3. Add in berries of your choice and mix until combined.
4. Divide among 12 regular muffin cups or 6 jumbo muffin cups. Bake at 375F for around 22 minute for regular muffins / 30 minutes for jumbo muffins. Cool to room temperature and enjoy!

Low Carb Cranberry and Orange Muffin Recipe
Hello everyone. welcome back to KemsKitchen. Super excited to share with you all this Cranberry and Orange Muffin Recipe. Absolutely delicious, low carb friendly, a burst of orange flavour and cranberry to compliment the taste! love love love!
INGREDIENTS
3 eggs, beaten
1 tsp vanilla extract
1/2 cup sour cream
1/3 cup sweetener of choice, I use powdered Pyure
1 tbsp orange peel, fine chopped
1 tsp avocado oil
3 cups almond flour
2 tsp baking powder
1/2 tsp nutmeg
1/4 tsp salt
1/3 cup dried cranberries
INSTRUCTIONS
- Preheat oven to 350ºF
- In a large mixing bowl, beat eggs, vanilla, sour cream, sweetener, orange peel and avocado oil until well combined.
-Add remaining ingredients (except cranberries), mix.
-Hand stir in cranberries
-Spoon into muffin papers or greased muffin tin.
-Bake 15 minutes or until top is firm and toothpick inserted in the middle comes out clean.

Orange Cranberry Muffin - Moist and Delicious - Bakery quality in your own kitchen!
Orange Cranberry Muffins
2 1/2 cups All-Purpose Flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup sugar
2 eggs
4 Tablespoons butter, melted
1/4 cup vegetable oil
1 cup buttermilk
2 teaspoons vanilla
zest of 1/2 an orange
1 1/2 cup cranberries
GLAZE:
1 cup confectionary sugar
3 Tablespoons orange juice
zest of 1/2 of orange
Preheat oven to 425. Spray your muffin tins or line them with muffin cups.
Soak the Craisins in warm water for 15 minutes; then drain. Stir in one tablespoon of the flour to coat the Craisins. Set aside.
Using a large bowl, stir or whisk together the flour, baking powder, salt, and sugar. Add the eggs, butter, oil, buttermilk, vanilla, zest of half an orange, and juice of half an orange. Stir or whisk to completely combine. Fold in the flour coated Craisins.
Spoon the batter into 12 jumbo muffin tins or 24 regular-sized muffin tins. Bake for 16 - 18 minutes for regular-sized or for 20 - 22 minutes for jumbo muffins or just until the center of each muffin is done. Remove from the oven and cool.
Once the muffins have almost cooled, stir together the powdered sugar, the other half of the orange zest, and the orange juice. Drizzle over the muffins.
