Ingredients for Bacon, Egg and Cheese Muffins:
12 eggs
4-6 oz bacon (ham, chicken cubes or any meat cooked)
4 - 6 oz cheese (I used Mozzarella, your choice)
1 belle pepper (I used half and half of red and green for color)
3 T fried onions for extra flavor
paprika (I used cayenne pepper to spice it up)
black pepper
Oven temperature is 360 degrees F baked for 22 minutes. Alternately, you may bake for 24 minutes for extra brown and crispy texture
Banana Smoothie recipe:
2 bananas
1/3 c milk
1/4 c greek yogurt
used 2 T sugar with plain yogurt (your choice)
1/4 t vanilla extract

Bacon & Onion Muffins Chinese Style
Welcome to Chinese Cooking. My name is Xiao Wei, even at a early age I have always had a strong passion for Cooking. My family still live in northern Chinese, where I visit each year and pick-up new Asian/Chinese recipes.
Ingredients:
40g Bacon
1 Red Onion
1 Egg
40g Oil
50g Milk
90g Plain Flour
5g Baking Powder
Salt to Taste
Method:
1. Dice the onion and bacon finely.
2. Fry the bacon for 5 minutes.
3. Add the onion and fry for 3 minutes until soft.
4. Remove from heat to cool down.
5. Break a egg into a mixing bowl and beat well.
6. Add oil, milk and mix well.
7. Sieve flour, baking powder and soda into the egg and mix ingredients.
8. Add the fried bacon and onion, fold with a rubber or wooden spoon until evenly mixed.
9. Fill muffin cups to about 80% full.
10. Place into pre heated oven at 180 degree and cook for about 25 minutes.
11. Remove from oven and serve.

Ingrediens for 6 BBQ Bacon Cupcakes:
500 g Ground Beef
125 g Grated Cheese
4 tbsp BBQ Sauce
125 g Bacon
BBQ Rub to taste
1 Egg
Fresh Chili to taste
Mashed Potatoes
Crispy Bacon (optional) for the topping

Preparation:
Put the ground beef into a bowl and season to taste with BBQ Rub. Add the cheese, bacon cubes, bbq sauce and a whole egg. Finely dice a fresh chili, add as much as you like to the me.at and mix everything well.
Form 6 (big) meatballs and place them in a muffin pan. Preheat you grill for 160°C / 320°F and place the muffin pan on indirect heat. Cook for approximately 35 minutes until the meat cupcakes are done.
Remove them from from the pan, pat dry and apply the mashed potatoes „icing“. Top with some crispy bacon and enjoy.

Inspired by The Birdhouse muffin at Tandem, a cute coffee shop in Portland, Maine, we decided to figure out how to make this muffin meal. Put a whole soft boiled or hard boiled egg inside of this cornbread muffin. Apparently San Francisco has a similar treat called The Rebel Within.

1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with cupcake liners.
2. Use a rolling pin to flatten each slice of bread. Press the flattened bread slices into the muffin tin cups, forming a cup shape. Ensure that the bread covers the bottom and sides of each cup.
3. Cook the bacon in a skillet over medium heat until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease. Once cooled, chop the bacon into small pieces.
4. Place a small amount of chopped bacon into each bread cup.
5. Crack an egg into each cup, being careful not to break the yolk. Sprinkle some salt and pepper over each egg.
6. Sprinkle shredded cheddar cheese on top of each egg.

Chicken and Bacon Muffin
Ingredients: for 5 persons
- 5 Boneless chicken thighs
- dry rub
- 20 strips thin sliced Bacon
- Olive oil
Ingredients for dry rub:
- 2 ½ cup brown sugar
- ½ cup coarse salt
- 1 cup paprika powder
- 6 tablespoons dried parsley
- 6 tablespoons dried basil
- 6 tablespoons dried oregano
- 6 tablespoons dried thyme
- 6 tablespoons dried onion powder
- 6 tablespoons dried parsley
- 3 tablespoons coarse ground pepper
- 2 teaspoon allspice
- 2 teaspoon cinnamon
How To:
- Oil your muffin pan
- Place four strips of bacon to cover all of the cup
- Sprinkle the chicken thighs with the dry rub
- Place the chicken thighs in the muffin pan
- Bake the muffins at 180 degrees Celsius or 350 degrees Fahrenheit
- The Chicken and Bacon muffins are ready when the core temperature reaches 75 degrees Celsius or 165 degrees Fahrenheit.
- Take the muffins out of the pan and grill them for a nice colour.
