This Easy Minestrone Soup is a healthy one-pot meal that's loaded with veggies, beans, and pasta. It's vegetarian, dairy-free, and can easily be made vegan or gluten-free. Make-ahead and freezer friendly!
Ingredients
1 tablespoon canola oil
1 small onion (finely diced)
2 ribs celery (sliced)
3 large carrots (peeled and finely chopped)
1 tablespoon tomato paste
1 tablespoon minced garlic (2 large cloves)
1½ teaspoons salt
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon black pepper
⅛ teaspoon crushed red pepper flakes
2 cups fresh spinach (roughly chopped)
4 cups low sodium chicken broth (or vegetable broth)
28 oz canned diced tomatoes (798 ml) no salt added
1 cup canned red kidney beans* (rinsed) 8 oz
1 cup canned white kidney beans* (rinsed) 8 oz
1 cups small uncooked pasta (I used medium shells)
Parmesan for serving
Instructions
In a large pot cook and stir the oil, carrots, celery and onion over medium-high heat until the onion has softened, about 3-4 minutes.
Add the salt, garlic, parsley, oregano, basil, and pepper and cook 1 minute.
Add the broth, tomatoes, and beans. Cover and simmer over medium heat for about 10 minutes or until carrots are crisp-tender.
Stir in pasta, cover and simmer for 10 minutes or until pasta reaches desired tenderness, stirring often.
Stir in spinach and serve with shredded Parmesan cheese as desired.

Ingredients:
▢1 tbsp olive oil
▢1 onion - finely diced
▢2 cloves garlic - peeled and minced
▢500 g (1.1lb) fresh ravioli - (use your favourite flavour)
▢1 red bell pepper - sliced
▢½ tsp Italian herbs
▢½ tsp chilli flakes (red pepper flakes)
▢½ tsp black pepper
▢a pinch salt
▢1 tbsp tomato puree (paste if you're in the US)
▢90 ml (⅓ cup) white wine
▢100 g (3 ½ oz) roasted cherry tomato halves - (you can buy these from the deli counter)
▢120 ml (½ cup) chicken stock
▢90 ml (⅓ cup) double (heavy) cream
▢90 g (3 packed cups) baby spinach
▢50 g (½ cup) parmesan - grated
▢1 tbsp fresh parsley - finely chopped
Instructions:
1. Add the 1 tbsp of olive oil to a large frying pan (or skillet) and heat over a medium heat, then add in the finely diced onion and cook for 4-5 minutes until the onion starts to soften.
2. Add in the minced garlic and cook for another 30 seconds stirring continuously.
3. Now add in the ravioli and the sliced red bell pepper and cook for another minute, stirring a few times.
4. Add in the Italian herbs, chilli flakes, black pepper and a pinch of salt, give it a stir then add in the tomato puree and wine, stir again, and cook for another minute to reduce the wine down slightly.
5. Add in the roasted tomatoes, chicken stock and cream. Stir everything together and bring up to a simmer. Allow to simmer for 5-6 minutes, until the centre of the ravioli is piping hot (you can open one up to check this).
6. Add in the spinach and parmesan and cook for a minute to allow the cheese to melt and the spinach to wilt.
7. Sprinkle with fresh parsley and serve.

Tortellini Pasta Vegetable Soup - Healthy Easy Recipe
Here is my recipe for a super tasty and quick tortellini soup. I LOVE making this - it is so so tasty. Makes a great speedy dinner or tasty lunch! The fresh basil is super yum but don't worry if you don't have any handy. Same as for the cheese at the end - makes it super yum but it's still nice without it. You can use any flavour tortellini you like (I like spinach and ricotta).
To make the soup vegan, you can use vegan tortellini and skip out the cheese or use vegan alternatives to cheese.
Serves 3 to 4.
Counts towards your 5 a day. 3 portions of your veg (based on serves 3).
Full recipe:
1. Fry a chopped onion in 1 tbsp veg oil until soft - about 5 to 10 mins.
2. Add a crushed garlic clove and fry for another 1 minute.
3. Add 1 chopped red pepper, 1 chopped carrot and 2 handfuls of frozen peas.
4. Fry all of this until the veggies are soft - about 10 minutes low heat.
5. Add 1 tin of chopped tomatoes, 1L veg stock (I use bouillon) and 1/2 tsp ground black pepper.
6. Bring to boil and then simmer for about 20 minutes low heat.
7. Now add 300g of stuffed tortellini of your choice and cook according to packet instructions - normally about 3 to 5 minutes.
8. Now serve and top with grated hard cheese (parmesan is lovely but check if it is vegetarian) and pepper. DELICIOUS!!!!
