How To make Tortellini with Walnut Pesto
1 lb Cheese and spinach-filled
-pasta (tortellini, -ravioli or agnolotti) 4 oz Walnuts, toasted
1 ts Crushed garlic
1/4 c Romano or parmesan cheese
1 c Heavy cream
1/2 c Sun-dried tomatoes, sliced
-thin Cook pasta in boiling water until al dente. Drain and set aside. Meanwhile, prepare sauce. Grind walnuts, garlic and cheese in food processor until mixture is well blended. Heat cream in saucepan. Add to walnut mixture, combine, and cook for 1 1/2 minutes. Add pasta and toss with sauce. Serve.
Garnish pasta with tomatoes.

Ingredients:
3 cups Fresh Basil Leaves
1 1/4 cup Olive Oil
40g Toasted Peanuts
2 tbsp Lemon Juice
6 cloves Garlic
1 tbsp Sugar
1/2, cup Grated Parmesan Cheese
Salt and Pepper to taste

How to make 92 yr old Pina's chestnut gnocchi with walnut pesto | Pasta Grannies
92 year old Pina lives in a remote village high in the Brevenna valley in Liguria. Here chestnuts are plentiful but wheat has to be brought from the local mill, so it's no surprise that chestnut flour is added to potato gnocchi, and walnuts to the pesto. The result is a delicious dish and Pina shares her recipe.
Easy walnut pesto for tortellini salad
Here's an easy and fresh salad with a delicious walnut pesto sauce and crunchy veggies. Perfect and fast.
Pesto: place these ingredients in a blender, or a magic bullet.
1/4 cup walnuts
1/3 serrano chili
s+p
1 cup basil
1 cup cilantro
1/4 cup parmesan
2 cloves garlic
1/4 cup olive oil
1/2 cup water
Cook 1 1/2 cups of mini tortellini
when cooked strain and place in to a large bowl along with 1 cup frozen peas, and 1 cup frozen corn.
Add the pesto and stir. The pasta will thaw the peas and corn and cool off the pasta.
Add 1/2 cup ground almonds,
1/2 juice of a lemon
1/2 juice of a lime
3 green onions chopped
1/2 cucumber cubed
1/2 bell pepper cubed
1 cup cherry tomatoes
1 glass marinated artichokes
Stir all together, add more salt and pepper
to taste, serve on a bed of fresh arugula and fresh cilantro.

Pansotti pasta with walnut sauce is a traditional dish from the Italian Riviera in Liguria, Northwest Italy.
