How To make Tortilla Torte
1 cn 15 oz pinto beans or 1 1/2 c
Vegetable cooking spray* 1/2 c Chopped onion
1 Clove garlic, minced
1/4 ts Ground cumin (sub. turmeric)
1/4 c Picante sauce
1 cn 4 oz chopped green chiles
4 8" wh.wheat flour tortillas
3/4 c Shred. Monterey Jack cheese
2 tb Sliced ripe olives
2 c Shredded lettuce
1 md Tomato, chopped
Hot green pepper slices, opt * Bean mixture required extra liquid - used vegetable oil Place pinto beans in a colander, rinse under cold tap water and allow to drain. Coat a large skillet with cooking spray; place over medium heat. Saute onion and garlic until tender. Stir in reserved beans and cumin. Reduce heat. Cook, uncovered, 30 min. or until mixture is a thick paste. Stir occasionally and mash beans with a wooden spoon. Set aside. Combine picante sauce and green chiles. Set aside. Wrap tortillas in aluminum foil and bake at 350 for 10 min or until thoroughly heated. Place a tortilla on a baking sheet lightly coated with cooking spray. Top with 1/3 bean mixture, 1/3 picante sauce mixture, 1/4 c cheese and 2 tsp olives. Repeat layers twice, top with remaining tortilla. Cover with foil and bake at 350F for 15 min or until thoroughly heated. Transfer to a serving platter. Arrange shredded lettuce around torte. Top lettuce with chopped tomato and garnish with hot green pepper slices, if desired. Cut into wedges to serve. 4 servings 269 calories per serving Protein 13.0, Fat 8.7, Carbohydrate 36.5, Fiber

There is no substitute for perfect fresh hand-made tortillas hot off the comal. It's the key ingredient for a good old fashioned taco, and knowing how to make them will only do good things for you. These flour tortillas will stand up to just about anything you put in them and they totally melt when eaten. Plus they're easy and only take about 25-30 minutes to make!

It’s officially time for back to school, can you believe it? ????????
Since today is the first day of school here in Ashland, OR, I thought I’d share a healthy recipe perfect for school lunches, those hot days when after-school snacks are needed, or when you’re just looking for something quick & easy, but delicious and healthy, to make for the family on those hectic weeknights. This quick & easy avocado wrap recipe is very versatile and something the whole will love.
Also, I’m looking for some tips on a topic that I haven’t yet been able to find a great solution for…one that works for me, anyway. Watch the video to learn what it is. I would LOVE to hear your tips and tricks on the subject. ????

AVOCADO WRAPS
INGREDIENTS:
* 8 flour tortillas
* 4-5 avocados
* 1 red onion
* 1 tomato
* 1 lime
* A small bunch of cilantro
* Salt and pepper
* 1 14.5 oz. can black beans
* 2 cups of grated Monterey jack and sharp cheddar cheese
DIRECTIONS:
Dice tomato, onion, and garlic. Wash and chop a small bunch of cilantro. Mix together in a bowl. Slice avocados and use a fork to cut together with onion, tomato, garlic, and cilantro. Squeeze in juice of one lime and season with salt and pepper. Grill tortillas (if desired). Spread with avocado mixture and then add a layer of beans and cheese. Roll and serve immediately.
