How To make Tuna Broccoli Potatoes
4 lg Baking potatoes
Vegetable oil 5 c Broccoli florets (1 bunch)
1 cn Tuna (7 oz drained, chunk)
1/4 c Celery, diced
1/4 c Green onions, chopped
1/2 c Mayonnaise
1/2 c Sour cream
1 ts Mustard (Dijon)
2 tb Butter, melted
1 pn Cayenne pepper
Salt and black pepper Scrub potatoes and prick skins with a fork; rub all over with vegetable oil. Bake in 425 F (220 C) oven for 45 to 55 minutes or until potatoes yeild to gentle pressure. Potatoes can also be microwaved. Meanwhile in a large pot of boiling water, cook broccoli, uncovered for 2 to 3 minutes or until tender-crisp. Drain and rinse under cold water; drain well and chop coursely. Place in a large bowl. Coursely flake tuna; add to broccoli along with celery and onions. Stir together mayonnaise, sour cream and Dijon mustard; set aside. Cut each potato in half lengthwise; carefully scoop out pulp leaving a 1/4 inch (5 mm) thick shell. Brush skins with butter; place on baking sheet and keep warm. In a bowl, mash potato pulp; mix in broccoli mixture and 3/4 cup (175 ml) of the mayonnaise mixture. Stir in the cayenne, salt and pepper to taste. Stuff into the potato skins, mounding the tops. Return to the oven and bake for 15 minutes or until steaming hot. Can also be microwaved. Serve with remaining mayonnaise mixture spooned over each potato. * I have not included times for the microwaves as they all vary with the wattage which affects cooking time. Potato Tuna Patties Recipe
Potato Tuna Patties can be served either for breakfast, lunch or dinner alongside a fresh salad and your favorite dipping sauce, either as appetizer. They keep well refrigerated and can be used for the next day meal, either warm or cold. Tuna in combination with mashed potato, corn, lemon and green onion seems to be a winner for our family and I am certain it will be for you too. Just give them a try.
Ingredients
Makes about 12 patties
10 oz (300 g) potatoes, boiled with their skin on and chilled
1 can (7 oz- 185g) tuna in oil, drained, flaked
1/2 cup corn kernels
2 spring onions, chopped
1 egg
lemon zest from 1 lemon
1/2 cup breadcrumbs
Salt and freshly ground black pepper
2 tbsp olive oil
1/2 cup breadcrumbs, for coating
Directions
1. Mash the potatoes using a potato masher.
2. Add the tuna flakes and mix with a fork.
3. Add corn kernels, chopped spring onions, egg and breadcrumbs.
4. Finally add lemon zest and season with salt and pepper. Stir well to combine.
5. Divide mixture into 12 portions. Shape them into patties. Place breadcrumbs on a plate and add the patties to coat.
6. Heat oil over medium high heat in a nonstick pan. Cook patties for about 3 minutes on each side until golden brown. Transfer the patties to a plate lined with paper towel to remove excess oil. Clean the pan with a paper towel and repeat until all patties are done.
7. Serve with your favorite salad, and sauce. We served it with our homemade chilli jam.

????Cheesy garlic chicken bites cooked in one pan with broccoli and spinach in under 15 minutes. This quick tasty dish is a great keto option and can be served with rice, zoodles or Pasta!
✳️ Ingredients ✳️
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
✳️ Instructions ✳️
Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through.
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.

Giant Jacket Potato Served with Tuna Salad and Broccoli
A favorite potato recipe ,a baked potato/ Jacket potato with Tuna salad and cheese on it.
I order 1kg of potatoes from very famous online market place, They delivered me a giant 1kg potato. I thought of giving a try with Jacket potato with that. It was enough for 3 people i would say
Incredibly fluffy inside and crispy skin. Here are the steps: How to Jacket potato:
1) Scrub the potatoes thoroughly
2) Cook half way through to speed up the process
3) Oil them to get crispy skin
4) Season GENEROUSLY. Potatoes love salt so add lot of salt
5) Poke holes, I gave huge cuts to my giant potato
6) Bake at 180 C for about 20-30 mins
If you skip the step 2 then bake for 1hr and 30mins.
