How to Make an Upgraded New-Style Tuna Noodle Casserole
STOVETOP TUNA CASSEROLE - Homemade Creamy Sauce
Quick and easy homemade stovetop tuna casserole recipe perfect for any night of the week. Seasoned egg noodles with green peas and chunk light tuna in a homemade creamy sauce then garnished with parmesan seasoned crushed saltine crackers.
Shopping List:
5 ounces egg noodles
1 cup frozen peas
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk, at room temperature
½ cup heavy cream
½ teaspoon kosher salt for the béchamel sauce
Pinch of nutmeg for the sauce
1/8 cup Kosher salt for the pasta water
¼ teaspoon garlic powder for the sauce
¾ teaspoon white pepper for the sauce
½ cup (2 ounces) freshly grated cheddar cheese
2 6 ounce cans of tuna packed in water, drained and flaked
1 tablespoons freshly chopped parsley for garnish
¼ cup crushed butter or Club crackers.
¼ cup freshly grated Parmesan cheese
Directions:
In a bowl, crush finely the crackers and add in the grated parmesan and parsley and set aside.
In a strainer add the tuna and allow to drain in the sink. When drained use a fork to flake.
Bring a large pot of water to a boil over high heat. Add the salt then add the egg noodles and cook 1 minute less than per package directions.
About 3 minutes or so before the noodles are done, add the frozen peas to the boiling water. Once the noodles are cooked to your liking, reserve ½ cup of the pasta water before you drain the noodles and peas and set aside.
Heat the cream and milk on low until slightly warmed.
Heat up a pan or skillet over medium heat. Add the butter and stir until melted. Add in the flour and constantly whisk for 2 minutes until it form a light paste.
Continue to whisk vigorously as you slowly and gradually pour in the warmed cream and milk. Stir until smooth and bring to a high simmer, whisking frequently to prevent burning.
Cook for a minute or two until the sauce has thickened.
Stir in the salt, garlic powder, nutmeg and pepper
Blend in the cheddar and parmesan and stir until melted, and then stir in the drained tuna then remove the sauce from the heat.
Add the drained noodles and peas into the sauce.
Add the reserved pasta water and mix until everything is well coated.
Mix well and sprinkle the cracker, parmesan and parsley garnish over the top of the noodle/sauce.

▪️ 2 5 oz. cans tuna (you can use either chunk light in water or solid albacore in water)
