1 1 lb package (3 cups) pitted -dates 4 oz Red candied pineapple 4 oz Green candied pineapple 4 oz Red candied cherries 4 oz Green candied cherries 1 lb Shelled Brazil nuts (3 cups) Or pecan halves (4 cups) . . 1 c Sifted enriched flour 1 c Sugar 1 ts Baking powder 1/4 ts Salt . . 4 Well beaten eggs 1 ts Vanilla or rum extract Halve dates and cut pineapple in chunks. combine with the whole cherries and nuts. Sift together dry ingredients, add to fruits and nuts, coating well. Stir in eggs and vanilla. Line two 8 1/2x4 1/2x2 1/2-inch loaf pans with heavy paper; then grease paper and pour in batter. Bake in slow oven (325?) 1 hour or till done. Cool.

A soft and moist eggless cake recipe for occasions like Christmas or even birthday parties. Kids always like any cake recipes, but with eggless tutti fruitti cake they would enjoy and crave for more and more. The measurements given in this recipe yields 6 slices.
Ingredients: (1 cup = 240ml)
Maida - ¾ cup Cornflour - 1½ tbsp Butter - 50g Sugar - 2 tbsp Baking powder - ½ tsp + ¼ tsp Baking soda - ¼ tsp Condensed milk - ¼ cup Soda water - half of ⅓ cup Vanilla essence - ½ tsp Tutti frutti - 2 tbsp Oil - 1 tsp
Method:
1. In a small bowl, add water 1 tbsp, baking powder ¼ tsp, oil and beat it well. This is an egg replacer. 2. In a sieve, add maida, cornflour, baking powder, baking soda, salt and sieve it. Keep this aside. 3. In a bowl, add butter, sugar and beat it well with electric beater. Add egg replacer, condensed milk, vanilla essence and beat till it becomes smooth. 4. Add this to flour and mix well with spatula. Add tutti fruitti and mix well. 5. Preheat oven to 180⁰ C. Pour batter into the greased pan and bake this for 35 minutes. 6. When its done, transfer to wire rack and cool it. Slice it and serve.
