2 flax eggs (2 tbsp ground flax seeds + 5 tbsp water)
1 cup (160 g) rice flour
6 tbsp (80 g) Erythritol or Xylitol or organic sugar
1/2 cup (60 g) almond flour
1 1/2 tsp baking powder
1 Pinch of sea salt
4 scant tbsp (50 g) coconut oil softened or vegan butter
2 tbsp (30 g) plant-based milk
1 tbsp vanilla extract

Homemade Vanilla Wafers
Here's how I made vanilla wafers. I used a recipe from Recipe Helpers but I added an extra 1/2 tsp. of vanilla extract and 2 tbsp. of honey. They taste just like store bought and can be made from food storage.
Vanilla Wafers (from Recipe Helpers)
½ cup powdered sugar
1/3 cup granulated sugar
1/3 cup shortening
1 egg
1 ½ tsp. vanilla extract
2 tbsp. Honey
1 ½ cups cake flour
1/8 tsp. salt
1 ½ tsp. baking powder
1 tbsp. Water
Preheat oven to 325 degrees. Cream together sugars, shortening, egg, vanilla and honey in a large bowl. Add the flour, salt, baking powder and water and mix until thoroughly combined. Put dough into a decorator bag and pipe out about 1 tsp. at a time. Pat down lightly so they will be somewhat flat. They should be slightly larger than a quarter. Bake for 14 minutes or until cookies are light brown.

Honestly, for such a simple cookie, the sky’s the limit, so think out of the box (the prepackaged cookie box, specifically).
Homemade vanilla wafers are super easy to make, and they’re so much more flavorful than the kind you can pick up at the store. This nilla wafer recipe also earns bonus points because the cookies keep really well, so you can make them in advance for any of your nilla needs.

▪️ 1 cup Nilla Wafer crumbs (about 1 1/2 cups of vanilla wafers, processed or crushed)
▪️ 2 tbsp unsalted butter, melted
Cream Cheese Mixture:
▪️ 1 (8 oz.) package light cream cheese, softened
▪️ 1/2 cup powdered sugar
▪️ 1/2 tsp vanilla extract
Homemade Whipped Cream:
▪️ 2 cups heavy whipping cream
▪️ 2-3 tbsp powdered sugar (use more or less based on preference - I used 2)
▪️ 1/2 tsp vanilla extract
Banana Pudding Filling:
▪️ 25 whole Nilla Wafers
▪️ 2-3 medium ripe bananas, sliced
▪️ 1 small (3.4 oz.) package vanilla instant pudding mix
▪️ 1 1/2 c. cold milk
