How To make Vegetable Fritters (Pakora)
1 c Chickpea flour (besan)
1/2 c Unbleached all-purpose flour
1/2 ts Baking soda
3/4 ts Cream of tartar
1/4 ts Sea salt
1 ts Cumin powder
1 ts Coriander powder
1 ts Tumeric
1/2 ts Asafetida (optional)
1/4 ts Cayenne pepper
1 1/4 c Cold water
2 tb Lemon juice
Oil, for frying 1 c Sliced potatoes (1/4" thick)
1 c Cauliflower florets
1 c Chopped bell pepper
Blend flours, baking soda, cream of tartar, salt and spices. Gradually whisk in water and lemon juice to make a smooth batter the consistency of heavy cream. Set aside. Heat about 3" oil in a large skillet or deep fryer. Dip vegetables in batter to coat. Immerse in hot oil, turning to cook evenly, until golden brown, about 5 minutes. Remove with a slotted spoon and drain on absorbent paper. Cover and place in a warm oven while cooking remaining pakoras. This is the basic pakora recipe which is a great place to start - remember to season to your taste with as much or as little spice as you like.
Ingredients
100g gram flour, sieved
1 medium onion
3 medium potatoes
1 tsp of salt
2 tsp of garam masala
1 tsp of turmeric
2 chillies, finely chopped
1 tbsp ginger, grated (optional)
Handful of coriander, chopped
2 tsp of dried fenugreek leaves
1 tsp of cumin seeds
½ tsp of red chilli powder
Water
Oil for deep frying
Method
Heat up the oil in a karahi or wok to a medium heat.
Slice the onion lengthways very thinly and place in a bowl.
Peel and grate (or very finely chop) the potatoes into the same bowl. You can also use aubergines and cauliflower - chop into very small pieces.
Sprinkle all the dry spices and freshly chopped coriander, chillies and ginger into the bowl and then sieve in the gram flour - mix together using your hand.
Add a small amount of water a little at a time to create a thick batter that coats all the vegetables. Squeeze the mixture through your fingers to ensure all the spices mix through. Do not leave the batter and vegetable mixture for too long before cooking.
Test your oil is hot enough by dropping a little batter into the oil. If it browns and rises immediately then it is ready. Very carefully drop in spoonfuls of the mixture into the oil and fry until golden brown.
Using a slotted spoon move the pakora around, be careful not to overcrowd the karahi.
Once golden brown and crisp remove from the oil and set on some kitchen paper.

Crispy vegetable fritters :
Ingredients :
Gram flour : 2 cups .
Corn flour : 2 table spoon .
Egg : 1 .
Lemon juice : I medium lemon .
Spinach : 6 to 7 leaves chopped .
Potatoes : 2 medium sized sliced into strips .
Onion : one medium sized sliced.
Brinjal : I medium sized cut into strips .
Green onions : one medium size chopped .
Coriander : 5 to 6 stems chopped into pieces .
Mint leaves : 6 to 7 leaves chopped .
Green chilli : 1 chopped finely.
Garlic powder: 1 teaspoon .
Zeera powder: 1 teaspoon.
Coriander powder : 1 teaspoon.
Whole zeera : 1 teaspoon.
Chaat masala : 2 teaspoon .
Red chilli powder : 1 teaspoon.
Ajwain : 1/4 teaspoon.
Whole coriander : 1 teaspoon.
Red chilli flakes : 1 teaspoon.
Turmeric : 1/2 teaspoon.
Salt : to taste
Procedure :
Take big bowl add spinach , potatoes , onions , brinjal ,green onions, mint leaves , spinach leaves, & green chilies . Mix well then add all spices mix them well so the in cooperate each other . Then add 2 tbs of corn flour & coat well on vegetables. Now beat on egg add lemon juice to it & mix with vegetables . Now slowly slowly add gram flour & mix , make a thick consistency. Fry it on medium hot oil on medium flame fro approx. 5 to 7 minutes till they turn goldinsh brown .
Stain them over a paper towel & ready to serve .

Ingredients:
-Brinjal
-Potato
-Onion
-Spinach
-Big Green Chilli
-Cauliflower
For Batter:
-2 cups of Gram flour/Besan
-1 Tbsp Ajwain/Carom seeds
-Salt to taste
-1 tsp turmeric/haldi
-1 tsp red chili powder
-1/2 Tsp black salt
-1 Tbsp Oil
-1 tsp dry mango powder
Method:
- Start with cutting the vegetables into thin slices.
- In a bowl add gram flour, ajwain, salt, turmeric, red chili
powder, amchur, black salt and oil( the oil helps in making crispy
fritters) and make it into a thick batter.
- Remeber to add water little by little so that the batter does not
become runny.
- Now coat the vegetables completely with the batter.
- Make sure the oil is hot, deep fry the coated veggies until golden
brown.
- Take out on a paper napkin/ tissue to remove excess oil.
- sprinkle some chaat masala and serve with a hot cup of tea.

VEGETABLE FRITTERS is very simple and easy to make. In Philippines, we call it Vegetable or Veggie Ukoy often serve as appetizer or afternoon snack. It is best to eat when still hot and crispy. Serve with dipping sauce of your choice, but great when dipped with spicy vinegar with calamansi.
In Indonesia, they call it Bakwan or Bala Bala in some regions. This fritters is very popular Indonesian streetfood that almost every roadside vendor sell it.
