White Gazpacho
1 Head Cauliflower - Cut up and Blanched in Salted Water
5 Ounces Cherry Tomatoes
2 Clove of Garlic
2 Tablespoons Cider Vinegar
21/2 Cup Vegetable Stock
3/4 European Cucumber- 1/2 for soup and 1/4 diced for Garnish
1 1/2 cups Slivered Almonds- Toasted- 1 Cup for Soup and half for Garnish
1 Shallot
1/2 Teaspoon Black Pepper
3 Dashes Hot Sauce
Mango Soup:
3 Ripe Mangos- Peeled and Chopped
1 Cup Whole Milk
1/2 Cup Plain Yogurt
1 Cup Unsweetened Coconut Milk
4 Sprigs Mint- 3Sprigs Picked and Chiffonade Cut/ 1 Sprig for Garnish
2 Dashes Hot Sauce
Cantaloupe Soup
1 Cantaloupe-Peeled and deseeded
5 Ounces Cherry Tomatoes
1/2 Clove Garlic
2 Tablespoons Cider Vinegar
1/2 Cucumber- 1/4 Peeled and Seeds Removed for Soup/ 1/4 for Garnish- Sliced
2 Dashed=s Hot Sauce
2 Scallions- Rough Chopped
1/2 Cup Vegetable Stock
A Few Radishes - Sliced For Garnish
Mint- a Sprig- for Garnish- Chiffonade Cut
Avocado Soup
5 Ripe Hass Avocados- All Pitted , Peeled and Chopped4 for Soup and 1 for Garnish
2 Cups Vegetable Stock
1/4 Cup Lime Juice
1/2 Cup Heavy Cream
1/2 Teaspoon Kosher Salt
1/2 Bunch Cilantro- washed well
5 Ounces Cherry Tomatoes

It’s a less well-known gazpacho, but I promise White Gazpacho or Ajo Blanco, is a totally addictive silky smooth chilled soup from the south of Spain. While the name translates to white garlic, it is really a showcase for Marcona almonds. And it's almond season in Spain, so it's time to enjoy some almonds at their freshest. It only takes a few minutes to prepare this as a perfect Spanish side dish to a multi-course meal or even Spanish main dish if you are just looking for a light lunch!

By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.

Fine dining CUCUMBER GAZPACHO recipe | Summer Cold Soup
I will show you my favorite recipe for cold cucumber soup aka cucumber gazpacho with melon gel, coconut cream, pine nuts crumble, and basil. This is a great combination for these hot summer days so I totally recommend you to try it.
Cucumber gazpacho recipe (adjust the last seasoning to your taste)
- 2 cucumbers
- 1 green bell pepper
- 2 sticks of celery
- handful of spinach
- handful of basil
- 50 ml of white wine vinegar
- 3 spoons of sugar
- 3 slices of bread
- water to get the right thickness
- salt to taste
Pinenuts crumble
- 60g of butter
- 20g of sugar
- 90g of plain flour
- 50g of pine nuts
- lemon zest and salt

White Gazpacho | Sailing Chef | S2 Ep 8
Full written recipe of White Gazpacho
Ingredients:
¼ watermelon, peeled and cut into cubes
¼ cantaloupe melon, peeled and cut into cubes
1 green cucumber, cut into cubes
1 yellow bell pepper, cut into cubes
2 medium tomatoes, cut into cubes
1 green chili, slit
Salt to taste
Juice of ½ lemon
2 tablespoons olive oil
1 teaspoon red wine vinegar
½ inch ginger
Few ice cubes
For garnishing
Few sprigs of mint leaves
Red chili powder
Freshly ground black peppercorns to taste
Ribbons of green cucumber
Method:
1. Cut watermelon and put it in a blender.
2. Add cantaloupe, cucumber, yellow pepper, tomato, green chili, salt , lemon juice, olive oil, red wine vinegar, ginger, ice cubes, a little water and blend it until smooth.
3. Pour it into a glass or a bowl.
4. Garnish with red chili powder, pepper, mint leaves and cucumber ribbons. Serve chilled.
