How To make Yemenite Charoset
1/2 c Slivered almonds
1/2 c Dried apricots
8 Dried figs,quartered
2 ts Ground coriander
2 ts Lime or lemon rind,finely
Grated 1 tb Honey
3 tb To 4 Passover sweet white
Wine 2 tb Sesame seeds toasted
Process almonds and apricots coarsely in food processor. Transfer to small bowl. Process figs to fine consistancy. Stir into almond apricot mixture. Add coriander, rind, honey and enough white wine to bind ingredients. Refrigerate for 1 hour. Roll into balls, 1" in diameter, roll in the sesame seeds and place each in miniature
paper cups, or shape into a pyramid and press sesame seeds into sides. Makes about 24 balls... ~--

Ashkenazi Charoseth
2 apples, finely chopped
1 cup coarsely chopped walnuts
2 Tbsp grated lemon rind
2 tsp cinnamon or to taste
honey to taste
kosher red wine or grape juice to bind mixture together
Mix everything together and chill until ready to serve.
Yemenite Haroset
1/2 cup almonds
1/3 cup walnuts
8 oz pitted dates
1/2 cup raisins
1 1/2 tsp cinnamon
pinch of ground cloves
1/4 tsp ground ginger
1/4 tsp ground cardamom
pinch of freshly ground pepper
2-4 tablespoons sweet red wine or grape juice
Finely chop almonds and walnuts in a food processor almost to a powder. Remove nut powder from the processor then finely chop dates and raisins. Combine chopped nuts with chopped fruit in a bowl, gradually adding in enough wine/juice to make a thick spread. Stir in the spices. Serve at room temperature or chill.

A sweet dish used for Passover, a Jewish holiday
This Yemenite version is not shy from toasted sesame, coriander spice and dates.
Apples is usually and can be used in different cultures but the traditional Mizrachi (Yeminite)
way is without apples.

Blend all ingredients in the blender and pulse till chunky or desired smoothness.
1 cup pitted dates
1 cup toasted walnuts and sesame
1/2 cup raisins or figs (dried fruit)
2 tablespoons (1/3 cup) of sweet wine
and /or
1/2 cup grape juice
1/2 tsp ginger
1/4 tsp coriander spice
1 tablespoon honey (optional)
Add more liquid if consistency is too thick.
Tip: Always put most of your liquids first for easier pulsing.
My Hebrew Israelite Sweet Tasting Charoset Recipe. Not only for Passover!
This dish doesn't only have to be eaten around Passover, it can be eaten by itself, with ice cream, or served over cake. Also, feel free to enjoy the wine left in the bowl, infused with all the flavors. Tastes Great!
1 Fuji Apple
1 Honey Crisp Apple
1/2 Pear
1/4 cup Dark Brown Sugar
1 Tbsp White Sugar
1 Tsp Vanilla
1/2 Tsp Cinnamon
1/4 cup Concord grape Wine (You can use less if desired)
1/2 cup Chopped Walnuts
1/2 Fresh Squeezed Lemon or ReaLemon 100% Lemon Juice
3-4 cups of Water
Fill medium to large size bowl with water. Add lemon juice to the water.
Peel the apples and 1/2 pear and place in bowl of water.
Dice the fruit.
Dump the water and use same bowl to place diced fruit along with all flavors (sugar, vanilla, cinnamon), walnuts, and wine.
Mix well, refrigerate and serve.
