7 can Taco Soup with Chicken Recipe: - 1 can black beans - 1 can pinto beans - 1 can petite diced tomatoes - 1 can sweet corn - 1 can chicken breast - 1 can green enchilada sauce - 1 can chicken broth (I used 2 cups) - 1/4 cup taco seasoning - 1/2 tsp cumin - 1/2 tsp chili powder - 1/2 tsp garlic powder
Combine all ingredients in a bowl or in a crock pot (slow cooker). Heat the 7 can taco soup until simmering. Let simmer for 15 minutes plus. 1 pound ground sirloin or ground beef 1 - 15 oz can black beans, drained and rinsed 1 - 15 oz can pinto beans 1 - 15 oz can Great Northern Beans 1 - 10 oz can Rotel Tomatoes 1 - 15 oz can diced tomatoes 1 - 15 oz can tomato sauce 1 - 11 oz can shoe-pegged corn 1 - 15 oz can beef broth 1 pkg. (2 TBSP) taco seasoning 1 pkg. (2 TBSP) Hidden Valley Ranch dressing mix tortilla chips sour cream shredded cheddar cheese
Brown the ground beef or sirloin in a large pot, chopping it into chunks as it browns. Drain all the grease from the meat.
Drain and rinse black beans well. Add to pot.
Open and add the next nine ingredients into the pot. DO NOT drain anything except the black beans. Stir to combine.
Gently heat but do not bring to boil.
To serve, place tortilla chips in bottom of each bowl. Ladle the soup over the chips and top with sour cream and shredded cheddar cheese, if desired.

Pour all cans in a large pot and mix. Cook on medium high heat until heated through. Stir occasionally. Reduce heat to low and simmer for 15 - 30 minutes. While simmering, you can make some cornbread or get your corn chips or tortilla chips ready. Put in a bowl, cover with chips, cheese, and sour cream. You can freeze the leftovers for another cold day!
