Mix in lightly the egg whites. Flavor with vanilla. Pour in cake pans, well grease, and cook from 25 to 30 minutes in oven 375 F. Spread marshmallow between layers and cover cake with Foaming Icing. INGREDIENTS:
Hot oil 1/4 cup
Flour 1/3 cup
Corn flour 1 tsp
Milk 1/4 cup
Vanilla 1 tsp
2 egg yolks
Mix well
2 egg white
Beat for 1 mins
Sugar 1/4 cup
Beat until stiff peaks
Add egg foam with flour mixture
Mix slowly do not over mix
6 inch greased pan
Hot water
Bake in preheated oven at 150c for 30-40 mins
Let it cool down

Chocolate(62%) 25g

▣ Baking:155℃/311℉ ⇨ 70min
▣ Method:
1. First, separate the egg whites and egg yolks, and freeze the egg whites for about fifteen minutes.

SOME TIPS TO BE FOLLOWED for a perfect chocolate sponge cake.

DO NOT substitute oil with butter.
Using whole milk improves the texture of the cake. It also gives you that nice crumb structure to the cake.
Whip the egg whites to stiff peaks .Add lemon juice ,vinegar or cream of tartar to the egg whites. This will give stability to the whipped whites which is responsible for that spongey and airy (or fluffy) texture of chiffon cake.

This recipe calls for a 6 inch cake pan. The removable base will make your life easier.
Do not open the oven door for the first 30 minutes or you are risking deflating the cake
Keeping a pan with hot water in the oven makes the cake more moist .
