dijon mustard

basil or 1tb crumbled dried, chopped, fresh

sugar 1 x black pepper, one grinding

olive oil

teaspoon
butter 3 ea cloves garlic, minced
1
cup
julienne strips cooked ham
2
tablespoon
parmesan cheese, freshly grated
4
cup
mixed greens (spinach, red leaf lettuce, arugula, etc)
1
croutons
1
nasturtium flowers, for garnish (optional)
Directions:
The Lemon-Basil Vinaigrette: Prepare the vinaigrette: In a small bowl, whisk together all the ingredients until smooth. Set aside.
Prepare the salad: In a small skillet, heat the oil and butter over
low heat. Add the garlic and saute 10 seconds. Add the ham and saute for
another 10 seconds. Off the heat, add the grated cheese.
Place the mixed greens in a salad bowl or plate and top with the ham
mixture. Garnish with the nasturtium flowers and drizzle the vinaigrette
on top. Top with croutons. Serve this with a good crusty load of French
bread and a bottle of dry white French wine.

Croque Monsieur
The croque-monsieur (literally translated as crunch sir.)is delicious, eat either as a snack or brunch... It should be rich, substantial and salty, so you will reach for a glass of wine or beer between bites.
Ingredients:
5 tablespoons butter(divide into 1 tablesp (15ml), 4 tablesp (60ml)
1 tablespoon(15ml) flour
⅔ cup (150ml)(5 fl oz) milk
Seasoning
Grated nutmeg
4 slices of bread
4 slices ham
2 slices Gruyere or Mozzarella cheese
Summer Salad
Ingredients: serves 6
2 tablesp (30ml) olive oil
2 tablesp (30ml) lime juice
2 cloves garlic, minced
1 tablesp finely chopped cilantro/parsley
Seasoning to taste
1 x19-ounce ( 540ml) mixed beans, rinsed and drained
¾ cups ( 115g)(40z) tomatoes, cut roughly chopped
1 cup (140g) (5oz) frozen corn, thawed
1 cup (140g) (5oz) chopped cucumber
¼ cup(30g)(1oz) thinly sliced green onions
Instructions:
In a medium bowl, whisk olive oil, lime juice, garlic, cilantro, salt, and pepper; set aside.
In a large bowl, combine remaining ingredients. Pour dressing over salad and toss until evenly coated.
Refrigerate 1 hour or until ready to serve.

How to make Croque Monsieur
One of my favorite things to eat when I visit Paris is croque monsieur. Not only is it affordable, but it is really yummy. This recipe tastes just like the croque monsieur sandwiches I have eaten in Paris. It is a sandwich with a layer of bechamel sauce, ham, cheese, more bechamel sauce, and more cheese, and toasted in the oven. Delicious! Try it for yourself. Hope you like it! :o)
Btw this recipe makes 4 sandwiches, you might be able to stretch it to 6 but the bechamel sauce will be thin on top. Should still taste fine.
