✅Ingredients
Cake:
• 2 cups all purpose flour
• 2 cups granulated sugar
• ½ cup unsweetened cocoa powder
• 2 teaspoons baking soda
• 1 teaspoon baking powder
• 1 teaspoon salt
• 2 large eggs
• 1 cup buttermilk
• 1 cup warm water
• ⅓ cup vegetable oil
• 1 ½ teaspoon vanilla extract
Coconut Pecan Filling:
• ½ cup salted butter
• ½ cup granulated sugar
• ½ cup brown sugar
• 3 large egg yolks
• 12 ounce can evaporated milk
• 2 teaspoons vanilla extract
• 1 ½ cups unsweetened coconut flakes
• 1 cup chopped pecans
Chocolate Buttercream (optional):
• 1 cup butter, softened
• ¾ cup unsweetened cocoa powder
• 1 teaspoon vanilla extract
• 3-4 cups powdered sugar
✅Instructions
Cake:
1️⃣ Preheat oven to 350 degrees. Butter two 9-inch cake rounds. Dust with flour or cocoa powder and tap out the excess.
2️⃣ In a large bowl or stand mixer, stir together flour, sugar, cocoa, baking soda, baking powder, and salt until combined.
3️⃣ Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth.
4️⃣ Divide batter evenly between the two pans.
5️⃣ Bake for 30-35 minutes until a toothpick inserted into the center comes out clean.
6️⃣ Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely.
Coconut Pecan Filling:
1️⃣ Melt butter in a medium saucepan over medium heat. Whisk in sugar and brown sugar until combined.
2️⃣ Add in egg yolks, evaporated milk, and vanilla extract. Cook over medium heat for 12 to 14 minutes until thickened, stirring frequently.
3️⃣ Remove from heat and stir in coconut flakes and pecans. Let cool completely, stirring occasionally, until spreadable.
Chocolate Buttercream (optional):
1️⃣ Make the frosting by In a large bowl, beat butter until fluffy using a hand mixer. Add in cocoa powder and vanilla extract. Beat until combined. Beat in powdered sugar, 1 cup at a time, beating in between. Transfer to two piping bags for frosting.
Assemble Cake:
1️⃣ Use half of the coconut pecan filling and spread in between the two chocolate cake layers. Spread the other half on top of the cake.
2️⃣ If using buttercream, spread the frosting on the outside of the cake and use a piping tip to decorate the top edge.

Recipe for the cake in grams and cups:
- 80 gr All Purpose Flour( 1/2 cups + 2 tbsp)
- 50 gr Unsweetened Cocoa Powder ( 7 tbsp)
- 150 gr Sugar (3/4 cup)
- 60 gr Butter or any flavorless Oil (1/2 stick butter OR 4 tbsp flavorless oil)
- 1/2 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1 Egg
- 125 gr Hot Milk (1/2 cup)
- 2 tbsp Hot Coffee
- Pinch of Salt
For the Chocolate Caramel/Syrup:
- 100 gr White Sugar (1/2 cup)
- 50 gr Water( use milk for a richer caramel) (1/4 cup)
- 1 tbsp Cocoa Powder
NOTE: To avoid crystallization, try to not stir your chocolate caramel. If you'd like a more in deapth explanation on how to make caramel, click here:
For the Ganache:
- 200 gr Dark Chocolate (7 ounces)
- 150 gr Heavy Cream (2/3 cup liquid heavy cream)

Ingredients:
For the cake:
1½ cups (190g) All-purpose flour
1/4 cup (30g) Cocoa powder
1 teaspoon Baking soda
1/4 teaspoon Salt
1 cup (200g) Sugar
1/3 cup (80ml) Vegetable oil
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Vinegar or lemon juice
For the chocolate ganache:
2 tablespoons (30g) Coconut oil
1/3 cup (40g) Cocoa powder
1/3 cup (100g) Maple syrup/agave syrup
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 350F (180C). Grease a 8-inch (20cm) round cake pan and set aside.
2. In a large bowl, stir flour, cocoa powder, baking soda, salt and sugar.
3. Add water, oil, vinegar and vanilla extract. Stir until combined.
4. Pour the batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, release from the pan, then let to cool to room temperature.
5. Make the frosting (optional): In a bowl stir coconut oil, maple syrup and vanilla extract. Add cocoa powder and whisk until combined and smooth.
6. Pour the glaze over the cake, spread evenly and refrigerate until set, about one hour.
Notes:
• The ganache is optional. You can serve the cake without the ganache and dust it with icing sugar.
• For extra rich flavour you can use coffee instead of water.
• Other options for chocolate ganache: coconut cream + dark chocolate. In a bowl place 100 grams chopped chocolate, pour 1/3 cup (80ml) hot coconut cream, let sit for 1-2 minutes, then stir and combined and smooth.
