CHOCOLATE AMARETTO CAKE WITH APPLE FILLING!!

100g/1 2/3cups flour
100g/1/2cup brown sugar
100g/1/2cup melted butter
100g/1/2cup melted dark chocolate 70%
100ml/1/2cup milk at room temperature
100g/32 amaretti +7-8 for the top
1tbsp baking powder
2 eggs at room temperature
2tbsp amaretto liqueur
3 apples
The juice of 1/2 lemon
The zest of a lemon
A pinch of salt
Peel,remove the core and slice the apples using a mandoline.
Place them into a bowl, and pour over them the liqueur and the lemon juice.
In a bowl add the butter, lemon zest, salt,eggs,sugar,amaretto crumbs and beat until creamy and fluffy, add the melted chocolate and beat until well incorporated.
Sift together the flour and baking powder.
Add the flour mixture and the milk alternately to the batter,and beat until combined,
Check with a spatula if everything is well combined.
Grease and flour a baking pan 20x20cm/8x8 inch,and transfer into the pan enough batter to form a base,spread evenly and place the apples over the batter,place the remaining batter over the apples and carefully spread evenly to cover the apples.
Sprinkle some amaretti crumbs on top, and bake it in a preheated oven at 180c/350f for 30/35 minutes.
Let it rest in the pan for 10 minutes,and completely on a wire rack.

Amaretto pie: a fantastic and delicious recipe!
INGREDIENTS
300g (2 ⅜ cups) all-purpose flour
2 eggs
5g (1 tsp) baking powder
110g (½ cup) soft butter
1 lemon (zest)
110g (½ cup) sugar
100g (2 cups) amaretto cookies
2 apples, peeled and sliced
200g (1 cup) apricot jam
Egg wash
METHOD
1. Preheat the oven to 180C/350F.
2. In a large bowl whisk together flour, lemon zest, and baking powder. Add butter and mix everything together, forming a crumbly dough base.
3. Separately whisk eggs with sugar and pour the egg mixture into the crumble. Mix to combine. Form the pastry into a ball, wrap it in plastic, and chill in the fridge for 1 hour.
4. Cut ⅔ of the dough and roll to 2-3 mm thickness. Place the pie crust into the pie pan 22-24 cm in diameter. Cut off any excess dough.
5. Spread apricot jam on the bottom of the pie base, and top with apple slices and amaretto cookies. Cover the pie with another ⅓ of the pastry, rolled out. Pinch the edges of the pastry together.
6. Brush the pie with egg wash and bake for 40 minutes.

La ricetta, è di mia zia Giuditta, che la preparava quasi tutte le domeniche quando ci veniva a trovare. La torta di mele e amaretti è perfetta per la colazione e per la merenda di grandi e piccoli. Pochi ingredienti semplici per una torta rustica adatta alle fredde giornate invernali...magari davanti ad un bel caminetto acceso!
