This 3 ingredient Fruit Cake is such an amazing way to enjoy your favourite festive cake anytime with easily available ingredients.
Ingredients
Mixed Fruit - 250g
Fruit juice- 250ml
Cake flour - 125g
Bake at 160°C for 1 hour or until the cake looks firm from the centre.
Few suggested alternatives
1. You can take any mixed dry fruits, plums, cherries and raisins of your choice.
2. You can try different fruit juice to make this cake with different flavours.
3. Do remember that we are not adding any sugar to this recipe , so you can add a preferably sweet fruit juice.
4. You can also substitute fruit juice with cold coffee for another yummy flavour.
5. Soak the mixed fruits preferably overnight for better results.
6. While baking you need to bake according to your oven timing .. For these measurements the mentioned time is mostly perfect if required you can bake for another 15mins or until the centre looks firm.

Eggless Fruit Cake with Buttermilk : Simple and Easy Recipe.
Fruit Cakes are one of those cakes that is perfect any time of the year especially for christmas!!! This eggless fruit cake made with buttermilk is super moist and fluffy. It is nicely spiced with ground cinnamon and nutmeg. It is also loaded with lots of juicy dried fruits and nuts . On top of this, it is egg less and alcohol free. Isn’t that great??? All you have do is gather a few ingredients, mix them and bake the cake, that simple!
Ingredients
All-purpose flour:225 g
Curd / yogurt / Thick buttermilk (at room temperature) :240 ml
Brown sugar (You may use white sugar also):170 g
Softened Butter:150 g
Salt:1/4 Tsp
Ground cinnamon:1/2 Tsp
Ground nutmeg:1/4 Tsp
Baking soda:1Tsp
Vanilla extract/Vanilla bean paste:1/2 Tsp
Raisins 1/2 cup
Cranberries 1/2 cup
Walnuts:1/2 cup
Dries plums/Prunes: 1/2 cup
Walnuts:1/2 cup
Candied peels:1/3 cup
I recommend to use a Total weight of dried fruits and nuts be around 350 -375 g in this recipe.
Method
Preheat your oven @350 degree F.
In a mixing bowl, mix together ,All the powdered ingredients.ie Flour,baking soda,salt, ground spices and whist them together to make sure everything is evenly distributed in the flour.And then add the dried fruits and nuts and mix them together and Keep it aside
In another bowl, mix together all the rest of the ingredients.ie,Softened butter ,brown sugar,vanilla extract and then the buttermilk and Mix them very well.
Mix together, the wet and dry ingredients together.
Immediately pour into the greased pan, smoothing the top with a spatula.
Bake in the preheated oven for about 60 to 70 minutes(@350 Degree F), or until the cake is golden brown. A toothpick inserted into the center of the cake will come out clean.
Remove from the oven and let them cool for 10 minutes before removing from the pan.
Your Buttermilk Fruit Cake is ready. Enjoy!!

A lot of people (including myself) make their fruit cakes several months in advance to give them time to mature. If you haven't got that time, you can whip up a quick fruit cake that is ready to eat same day and will save you time and effort. All you need to do is heat your dried fruit in alcohol until the fruits start to become plump, then blend most of them for even distribution in the cake.

I use cranberries, glace cherries, sultanas and mix fruit (with peel etc). Be generous- you can even add 400g of dried fruit if you prefer.

▼YOU WILL NEED▼
350g // 12.4oz // 3 cups Siifted self raising flour (or all purpose/plain and baking powder)
300g //10.5oz // 1+2/3 cup brown sugar
300g //10.5oz // 1+1/4 cup margarine
5-6 teaspoons spices
1 teaspoon vanilla
3 tablespoons black treacle
350g // 12.4oz // 2+1/3 cup dried fruit
6 eggs
Zest of one citrus fruit
200-250ml /1 cup / 7-8.5fl oz alcohol (Sherry or Rum)/fresh orange juice (no alcohol version)
First, heat fruits and alcohol (I use Sherry or Spiced Rum) then allow to cool whilst making the cake batter
1. Mix butter/marg and sugar until fluffy
2. Add treacle and vanilla then mix
3. Add eggs, orange zest, flour and spices then mix
4. Mix blended fruit in - about 2/3 of your fruit
5. Mix whole fruits in - the remaining 1/3
6. Bake at 160c for 30 minutes then 140c for 90 minutes - cover the cake very loosely with foil to prevent browning too quickly on top. Bake in the middle of your oven
