How To make Apple Meringue Pie
1 Nine inch baked pastry shell
6 c Tart apples, pared and cored
1/2 c Raisins
1 c Sugar
1 tb Butter
2 tb Flour
2 Egg yolks, well beaten
Rind and juice from 1 lemon
3 Egg whites
1/4 ts Cream of tartar
1/2 ts Vanilla
6 tb Sugar
Cook apples and raisins with 3/4 cup water for 15 minutes at medium heat until apples are tender. Remove from heat; drain excess liquid. Gently fold in sugar, butter, flour, 3 egg yolks, and rind and juice from lemon. Return to heat. Cook for 5 minutes or until thickened. Spoon into baked pastry shell. Beat egg whites with cream of tartar and vanilla until soft peaks form. Gradually add sugar and beat until stiff. Spread meringue over filling, sealing to edge of pastry. Bake at 350~ or until meringue is golden.

Ingredients:
290g (2 1/3 cups) flour
200g (7/8 cup) butter
130 g (2/3 cup) sugar
9g vanilla sugar
1 tsp baking powder
Pinch of salt
3 egg yolks
Filling:
5 large apples
50g butter
50g sugar
Pinch of salt
1 tsp cinnamon
Meringue:
5 egg whites
200g sugar
Pinch of salt
Directions:
1. Combine the flour with butter, salt, and baking soda. Add egg yolks, vanilla sugar, and sugar. Mix until fine crumb forms. PS: If your crumb is to sticky add a little more flour.
2. Put it in a 26 cm springform. Stick the crumb only on the edges and sprinkle on the bottom. Put it in the fridge until you prepare the filling.
3. Peel the apples and cut them into 8.
4. In a pan add butter, sugar, salt, and cinnamon and mix. Add sliced apples and caramelize for about 5-7 min on low heat.
5. Pour apple filling in the springform.
6. In a bowl add 5 egg whites with a pinch of salt and mix. Gradually add the sugar. Beat until the meringue is ready. Pour the meringue over the apple filling.
7. Bake at 180°C for 25-30 min with fan/45 min without fan or until golden brown.
8. Enjoy it!
