How To make Apple Pastry Squares
1/4 c Brown sugar
2 tb Cornstarch
1 c Water
5 c Apples, peeled and sliced
1/2 ts Cinnamon
1/4 ts Nutmeg
1 tb Lemon juice
2 c Flour
2/3 c Shortening
1/2 ts Salt
2 Egg yolks, beaten
1/4 c Cold water
1 tb Lemon juice
1/2 c Powdered sugar
1 tb Milk
1 tb Butter or margarine
1/2 ts Vanilla
Combine sugar, cornstarch and butter in saucepan. Mix until well blended, add apples. Heat to boiling, stirring constantly. Remove from heat, stir in spices and lemon juice, set aside. For pastry, combine egg yolks, water and lemon juice. Blend into flour. Mixture will form a ball, divide in half. On lightly floured board, roll dough between 2 pieces of waxed paper to fit bottom and halfway up sides of 9x13 inch pan. Spread apple mixture over pastry. Roll remaining pastry to fit pan. Place on top of filling. Fold bottom pastry over and press to seal. Cut a few slits in top. Bake for 40 minutes at 400 degrees or until lightly browned. Combine ingredients for glaze and drizzle over cooled pastry.

The Most Delicious Apple Galette with Puff Pastry: Easier than Apple Pie!!!

Ingredients
1 (12oz/340g) puff pastry sheet
For the Caramel Sauce:
2 cups granulated sugar
1/3 cup water
6 oz butter, cubed
1 cup heavy whipping cream
1 teaspoon pure vanilla extract
a pinch of salt
For the Apple Filling:
4 large apples (Gala, Granny Smith, or Pink Lady) peeled and cored
juice of half lemon
1/4 cup brown sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
The egg wash:
1 egg
2 tablespoons milk
granulated sugar for topping
Serve with:
ice cream
toasted chopped pecans
confectioner's sugar
Instructions
Make the Caramel Sauce: In a deep saucepan, combine the water and sugar and cook over medium heat for about 10-15 minutes or until a caramle color is reached. Remove from heat and add the butter. Whisk together while wearing oven mitts. The steam is dangerously hot! Add the cream and vanilla and return to medium-heat. Cook for 3-4 minutes while stirring. Add a pinch of salt and pass through a strainer and into a heat-ptoof bowl. As it cools, the caramel sauce will thicken.
Assemble the Galette:
Lightly flour your work surface and roll out the puff pastry sheet 3-4 inches on all sides. Transfer to a baking tray lined with parchment paper and chill in the freezer while the apple filling is prepared.
Slice the apples 1/8-1/4 inch thick and place the slices into a large bowl. Top with the brown sugar, cornstarch, lemon juice, and cinnamon. Toss together until the apples are coated.
Arrange the apples in the center of the puff pastry sheet. Leave a 3-inch border.
Fold the puff pastry crust over the edge of the apple filling to create a border. Press together to seal (see video).
Combine the egg and milk in a bowl and whisk together. Brush the eggwash over the crust and sprinkle with some granulated sugar.
Chill the galette in the freezer while the oven preheats.
3. Preheat the oven to 400 °F, 200 °C.
4. Bake the Galette on the center rack for 40-45 minutes.
5. As soon as the galette comes out of the oven drizzle about a cup of the caramel sauce over the apples.
6. Serve with ice cream and Greek Coffee.

Notes
The Caramel sauce keeps fresh in the refrigerator for 2-3 weeks and in the freezer for over a month.

Apple Turnovers in Puff Pastry

Ingredients
2-3 (1 pound) sheets of puff pastry, thawed
granulated sugar for topping
confectioner's sugar for garnish
For the Apple Filling:
10 apples, Gala, Granny Smith, or Pink Lady
4 oz (114g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
For the Egg wash:
2 egg yolks
2-3 tablespoons milk
Instructions
Make the Filling:
Peel, core, and slice the apples about 1/4 inch thick. Melt the butter in a large skillet and add all of the filling ingredients except for the cream to the skillet. Cook over medium heat while stirring until the filling thickens. Remove from heat and add the cream. Add more cream if the filling is too thick. Mix and set aside to coll completely. The apple pie filling can be stored in an airtight container in the refrigerator up to 2 weeks.
Assemble the Pastries:
Cut the puff pastry into 5-inch (13 cm) squares.
Place a heaping tablespoon of the filling (be careful not to add too much filling or the pastry won't seal) in the center. Fold the pastry over to seal the edges forming a triangle. Press the edges together using the tines of a fork to create a decorative border and to seal the pastry.
Place the turnovers on baking trays lined with parchment paper.
Combine the egg yolks with milk in a small bowl and whisk together. Brush the tops of the pastries with the egg wash. Sprinkle some granulated sugar on top.
Preheat the oven to 400 °F, 200 °C.
Chill the pastries in the freezer for 15-20 minutes. Thsi will help them puff up better when they bake.
Bake the pastries on the center rack for 20-25 minutes or until puffed and golden.
At this point you can freeze the pastries that you will not bake. Place in the freezer on a tray until they are frozen solid. Transfer the pastries to freezer-safe bags and they will keep fresh in the freezer for up to 3 months. Bake them frozen until golden. About 35 minutes.
Dust confectioner's sugar over the pastries and serve warm. Kali Orexi!
