How To make Applesauce Cupcakes
1/2 c Margarine
1 Egg
1/4 c Sugar
1 1/2 c Flour
1 ts Baking soda
1/4 ts Salt
1 ts Cinnamon
1 1/2 ts Nutmeg
1 c Unsweetened applesauce
1 ts Vanilla
1/4 c Chopped walnuts
Preheat oven to 375 F. Cream margarine until fluffy. Beat eggs and sugar; add to margarine and blend. Sift together dry ingredients. Add to margarine mixture alternately with applesauce, mixing well after each addition. Stir in vanilla and nuts. Spoon into 12 cupcake pans sprayed with vegetable pan spray or use paper baking cups. Bake 15-20 min. 1 cupcake - 177 calories, 1 1/2 Starch/bread exchange, 1 1/2 fat 2.7 gm

These moist delicate mini cupcakes are great for any occasion.
1 1/2 cups brown sugar
1/2 cup shortening
1 egg room temperature
1 cup applesauce sweetened or regular
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
2 cups cake flour
If you don't like cloves use 1 1/2 teaspoon cinnamon total
Makes 75 mini cupcakes
Bake at 375 for 7- 9 minutes depending
Frosting your choice I used chocolate syrup frosting
If you want to make regular size cupcakes it makes 18

It is the perfect thing to make if you have lots of leftover applesauce that you aren't going to eat fast enough before it goes bad. These easy muffins are not too sweet, a bit moist, and a bit dense. So amazing! If I can do it you can do it. Let's get baking!

Ingredients:
4 cups of flour (500g)
2 cups of granulated sugar (400g)
2 large eggs
2 cups of applesauce (500g)
1 cup of melted butter (225g)
1 tsp of vanilla extract (5ml)
1 tsp of cinnamon (2.5g)
1 tsp of baking soda (4g)
1/2 tsp. of salt (2g)

The applesauce muffin recipe makes about 24 muffins. Bake at 350 F/176 C for 20 to 25 minutes.
