How To make Apricot Bagel
1 1/8 cups water
2 teaspoons orange extract
optional
1 tablespoon olive oil
2 tablespoons malt powder :
or honey / sugar
1 teaspoon salt
3 1/3 cups bread flour
1 tablespoon wheat gluten optional
2 teaspoons yeast
3/4 cup dried apricots :
diced
Place ingredients in the bread machine in the order listed. Use the dough setting. Add the apricots 5 minutes before the end of the kneading phase or work into the dough before shaping. If you don't have a dough setting stop the machine after the rises. Prepare the baking sheets or use nonstick sheets. Remove dough from the machine, punch it down, and roll it out into a rectangle about 14 x 18. Divide into equal pieces and shape into bagel form or use a cutter. Place the bagels on the sheets and let them rise again. I put them in the oven to provide a draft free location. This rise can be anywhere from 20 minutes to 4 hours depending on what else is going on in your life. Fill a 4 to 6 qt soup pot with water 3 to 4 " deep. You can add 2 T of malt syrup, honey, sugar or non-diastatic malt powder. Get the water to boiling. Preheat the oven to 400. Drop the bagels one at a time into the boiling water. Boil only 3 or 4 at a time so they don't crowd. Simmer each side for a minute and return to the baking sheet. Add glazes or toppings as desired. Bake just below the middle of a preheated 400 degree oven. The book calls for 20 to 25 minutes. I usually start at 15 minutes for the 1st sheet and less for the second. These are best eaten while they are still warm. They can be frozen - you may want to slice them first so you can defost them in the toaster.

Savory Bagel Spread
½ tablespoon toasted sesame seeds
½ tablespoon poppy seeds
½ tablespoon dried chopped onion
½ tablespoon dried garlic flakes
4 ounces cream cheese, softened
2 freshly-toasted bagels (4 halves)
In a small cup, use a spoon to mix sesame seeds, poppy seeds, dried chopped onion, and dried garlic flakes. In a small bowl, use a fork to mash one-half of the mixture into softened cream cheese, reserving the other half for topping. Spread 4 freshly-toasted bagel halves with cream cheese blend. Sprinkle top of toasted bagels with reserved mixture. Serve immediately. I hope you love this combination! --Betty :)

Heute haben wir uns ein tolles Frühstück zubereitet. Zuerst haben wir Aprikosen einen Tag lang in der Sonne trocknen lassen und dann daraus eine leckere Marmelade gemacht ???? Die Aprikosenkerne haben wir auch geknackt und mitserviert. Dann haben wir unsere Butter aus Sahne und frischen Frischkäse mit frischer Milch zubereitet. Unseren Joghurt mit Kaymak hatten wir schon zuvor vorbereitet. Dazu haben wir perfekt zum Frühstück passend riesiges frisches Brot gebacken und zuletzt noch Tee serviert. Es war ein vergnügliches und leckeres Frühstück im Garten mit der ganzen Familie ????
Today we prepared a great breakfast. First we let apricots dry in the sun for a day and then made a delicious jam out of them ???? We also cracked the apricot seeds and served them along. Then we made our butter from whipping cream and fresh cream cheese with fresh milk. Our yogurt with kaymak we had already prepared before. In addition, we baked huge fresh bread perfectly matching the breakfast and lastly served tea with it. It was a fun and delicious breakfast in the garden with the whole family ????
Bugün kendimize güzel bir kahvaltı hazırladık. Önce Malatya kayısısından güneşte bir gün beklettikten sonra güzel bir reçel yaptık. Kayısı çekirdeklerini kırıp, kabuklarını soyup içine ekledik. Sonra kaymaktan tereyağımızı yaptık. Taze sütten taze krem peynir hazırladık. Kaymaklı yoğurdumuzu da daha önceden hazırlamıştık. Bir de kahvaltıya uygun kocaman şişen ekmekler yaptık. Yanına bir de demli bir çay. Bahçede ailece keyifli ve lezzetli bir kahvaltı oldu ????
