Spinach Artichoke Pasta Bake
Snag a plate of this creamy SPINACH ARTICHOKE PASTA BAKED!
Ingredient:
1 tablespoon olive oil
4 garlic cloves, minced
2 (10-ounce) bags baby spinach
2 (14-ounce) cans artichoke hearts, drained and artichokes halved
salt and ground black pepper to taste
3 cups whole milk
12 ounces penne pasta
4 ounces cream cheese
½ cup grated Parmesan cheese
1½ cups grated mozzarella (or Monterey Jack cheese)
¼ teaspoon cayenne pepper
½ cup low-sodium chicken broth, or as needed
½ cup seasoned panko bread crumbs
1 pinch red pepper flakes, or to taste
Preparation:
Heat olive oil in a large pot or skillet over medium. Cook garlic in oil until fragrant, about 30 seconds; add spinach and cook until wilted, about 1 minute. Stir the artichoke halves with the spinach, season with salt and pepper, and cook to heat the artichokes, 1 to 2 minutes more. Transfer mixture to a bowl.
Return pot to medium heat; add milk and penne. Bring milk to a simmer and cook until milk thickens and the pasta is al dente, 13 to 15 minutes.
Stir cream cheese, Parmesan cheese, mozzarella cheese, and cayenne pepper with the pasta; season with red pepper flakes. Continue cooking, stirring continually, until the cheese melts completely, adding chicken broth as needed to keep the liquid from getting too thick, 2 to 3 minutes.
Preheat your oven’s broiler.
Transfer pasta mixture to a baking dish. Sprinkle panko over the pasta.
Heat dish under the broiler to brown the bread crumbs, 2 to 3 minutes.

Spinach Artichoke Chicken Casserole

A JOURNEY TO HEALTHY COOKING: Spinach Artichoke Chicken Casserole
INGREDIENTS
* Avocado Oil
* 4 cups cooked chicken, shredded (I prefer chicken thighs so it’s dark meat but you can use chicken breast or tenders if you prefer)
* 6 cups/handfuls of fresh organic spinach, cooked
* 12 ounces plain or marinated artichokes, chopped
* 3 cloves garlic minced
* 8 ounces cream cheese at room temperature
* 3 tbsp sour cream
* 1/2 cup heavy cream
* 1 tbsp of mayonnaise
* 1 cup parmesan cheese grated
* 1 1/2 cups shredded mozzarella cheese
* Black pepper to taste
TOOLS
* Large Mixing Bowl
* Mixing Spoon
* Oven Safe, 9”x13” Casserole Dish
* Frying Pan
* Cutting board
* Knife
* 1 tbsp measuring spoon
* 1/2 cup measure cup
DIRECTIONS
1. Preheat oven to 375F.
2. In a skillet/fry pan on medium heat, drizzle a little avocado oil and add your chicken. Sprinkle Black Pepper on each side. Cook on each side for a few minutes until the chicken is cooked through. Place off to the side to cool slightly.
3. Keeping any leftover juices in the pan from the chicken, add in your fresh spinach. Cook the spinach until it is wilted..
4. While the spinach is cooking, in a large bowl, combine the softened cream cheese, sour cream, heavy cream, mayonnaise, garlic, and pepper.
5. Shred the chicken so it is in small pieces then add to the bowl. Mix together.
6. Add the garlic to the spinach in the pan, stir and cook for about 2 minutes so it is fragrant. Remove from heat and add spinach to the mixture.
7. Chop the artichokes then add to the mixture and stir.
8. Add the grated parmesan cheese to the mixture and stir everything together.
9. Pour mixture into the greased 9 x 13 baking dish. Top with the shredded mozzarella cheese.
10. Bake for 20 minutes then increase the temperature to 495F and bake for another 5 minutes or until the cheese is slightly golden and bubbly.
11. Allow to cool slightly before serving. Enjoy!
