How To make Banana Fruit Cake
3/4 c Butter
2 c Brown sugar
4 Eggs
2 1/2 c All-purpose flour
1 c Walnuts; chopped
3 c Candied fruit
2 c Dates; chopped
1 tb Orange juice
1 ts Orange rind; grated
1/2 ts Orange extract
1 ts Baking powder
1 ts Baking soda
1 ts Salt
1/4 ts Ground nutmeg
1/4 ts Ground cloves
1 ts Ground cinnamon
1 1/2 c Mashed bananas
Recipe by: Rose Murray, The Christmas Cookbook Great Canadian Prepare two 2 Litre (9" x 5") loaf pans. Preheat oven to 300 F. In a large bowl combine the fruit, dates, pineapple and walnuts. Dredge them with 1/4 cup of the flour. Sift the remaining flour together with the baking powder, baking soda, salt, cinnamon, nutmeg and cloves. Set aside. Cream the butter, add the sugar and beat until the mixture is light and fluffy. Beat in the eggs, one at a time. Beat in the orange rind, orange juice and orange extract. Mash the bananas with a fork. (A food processor will tend to liquefy the bananas and this will change the texture of the cake.) Alternately stir the bananas and the flour mixture into the creamed mixture. Stir in the floured fruit and nuts. Turn into the prepared pans and bake for 2 hours and 15 minutes, or until a skewer inserted into the middle of each cake comes out clean. Cool in the pans for 20 minutes, then turn out onto racks. Yields about 5 pounds of cake.

3 banana
Mashed well
Keep aside
2 egg (substitute 1/2 cup condensed milk)
Sugar 1/2 cup
Vanilla 1 tsp
Mix well
Mashed banana
Melted butter 50gm
Mix well
All purpose flour 1 & 1/2 cup
Baking powder 1 tsp
Baking soda 1/2 tsp
Milk 1/2 cup
Dry fruit 1/2 cup
Flour 1 tsp
Mix well
9 inch greased mould
Swirl with a toothpick
Place a stand & heat the pan for 5 mins on medium flame
After 5 mins place the mould
Cook it on medium flame for 30-40 mins or bake in preheated oven at 160c for 30-40 mins
NOTE: 1 CUP = 250 ML

GREASE OIL
PLACE BAKING PAPER
PLACE A STAND & HEAT THE PAN FOR 5 MIN. ON MEDIUM FLAME
AFTER 5 MIN PLACE THE MOULD
COOK IT ON MEDIUM LOW FLAME FOR 30-40 MIN
OR BAKE IN A PREHEATED OVEN AT 180c FOR 30-40 mins

Banana - 2 or 3
Egg - 2
Melted Butter - ⅓cup (75g)
Brown sugar - ¼cup (50g)
Sugar - ½cup (100g)
Milk - ½cup (120ml)
Baking powder - 1tsp (4g)
Baking soda - 1tsp (5g)
Cinnamon powder - ¼tsp
Vanilla essence - 1tsp (5ml)
Salt - ¼tsp

If you’re looking for a banana bread recipe that is super moist and bursting with banana flavour, then this recipe is it! It comes together so easily, and is finished off with an optional topping of walnuts that add great crunch and texture to the banana loaf – so so good!
INGREDIENTS:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
▢1½ cups (339 g) mashed bananas - about 3 large bananas, must be ripe bananas (the riper the better!)
▢1⅔ cups (200 g) all purpose flour
▢2 tbsp (16 g) cornstarch - also known as cornflour in some countries
▢1 tsp baking powder
▢¾ tsp baking soda
▢½ tsp salt - omit if using salted butter
▢¾ tsp ground cinnamon
▢¾ cup (150 g) soft brown sugar
▢¼ cup (56 g) unsalted butter - room temperature
▢¼ cup (52 g) unflavoured vegetable oil - I use canola oil
▢1½ tsp vanilla essence/extract
▢1 large egg - room temperature, size 7 egg
▢¼ cup walnuts - you can add more or less
Bake at 160 °C (320°F) with the fan on (convection mode) for 1 hour, or until a skewer or knife comes out clean. If you don't have a fan function, increase the temp to 175°C (347°F).
