10 MIN EASY Chicken Soup with Pears 旺梨鸡汤 (Thermal Pot Cooking)
This is the last recipe we prepared specially for Chinese New Year. We thought this Chicken Soup with Pears is an excellent dish to be added on your reunion dinner menu because of its cooling effects. I’m not sure about you but we’re definitely going to gobble down lotsa bak kwa, love letters, pineapple tarts and other heaty food so this soup can help balance things out a little (or so we hope ????)

Ingredients:
Serves 6 - 8
1 whole chicken about 1 kg
250 g of lean pork - cut into cubes
6 pieces of Chinese yam also known as huai sheng
4 pieces of honey dates
2 pieces of pears (you can use any types of pears)
15 g of northern almonds
15g of southern almonds
Add enough water until 1 inch above the ingredients in the pot
1 tablespoon of wolfberries
2 teaspoons of salt
VOL 2: Doug Almond’s Braised Shin of Beef with Onions, Mushrooms and Barley
A very Happy Birthday to Doug Almond! To celebrate we have another cooking video for you, this time its Doug Almond’s Braised Shin of Beef with Onions, Mushrooms and Barley
Ingredients:
• 1lb shin of beef
• 1 ½ thinly sliced onions
• Handful of sliced mushrooms
• Small handful of barley
• Bouquet garni (selection fresh herbs, tied together)
• Tomato puree
• 250ml Red wine
• Plain flour
• Red wine vinegar
• 1 tsp Dijon mustard
• Tomato ketchup
• Worcester sauce
• Tender-stem broccoli
• Sweet potato
• Grated cinnamon
Method:
Preheat the oven to 200 degrees
Shin beef casserole
1. Season the shin beef in a bag with flour, salt and black pepper. Shake the bag over the sink until the steaks are coated in the seasoned flour
2. Heat vegetable oil in a large casserole dish over a high heat
3. Once hot add the beef, wait to hear the sizzle from the oil. Turn the steak when well browned on one side and allow the other side to brown. Do not turn them too early!
4. Wash the barley (pulses) in a little warm water and leave to soak
5. Once cooked place the steaks in the oven in a separate dish
6. Add the sliced onions to the same pan the beef steaks were cooked in, put the lid on to sweat off until transparent
7. Add the sliced mushrooms, bouquet garni and a squirt of tomato puree. Stir to coat
8. Drain the barley and add to the pan
9. Add the stock (without spilling it!)
10. Add the red wine
11. Season with black pepper
12. Add the shin beef and juices to the pan and cover with the vegetables and sauce
13. Add Dijon mustard, a dollop of tomato ketchup and a little Worcester sauce
14. Give it a quick mix, put the lid back on and put in the oven at 200 degrees for a few minutes then turn it down to 180 degrees. Leave to cook for an hour and a half
15. Once out of the oven pour a little red wine vinegar into the casserole
Sides:
Tender-stem broccoli
1. Heat a wide based dry pan put the broccoli in to singe
2. Add some butter and a little boiled water and season.
Sweet potato mash
1. Boil and mash sweet potatoes and mix with some butter and fresh, grated cinnamon
To serve
Serve the beef steaks with the sweet potato mash and singed tender-stem broccoli with the juices poured over.

Recipe for Marinara:
28 oz. can of low-sodium crushed tomatoes.
1 Tbsp. dried oregano
1 Tbsp. dried basil
1 tsp. onion powder
1 tsp. garlic powder
1/4 tsp. red pepper flakes
1 Tbsp. maple syrup
Salt to taste
Place ingredients in a sauce pot over medium heat until it starts to bubble, about 3-5 minutes.
Reduce heat to low and simmer, covered for another 5-8 minutes, stirring often.
Turn off heat and serve.

Recipe for tofu ricotta (From The Starch Solution):
1 12.3 ounce package silken tofu
1 pound fresh water-packed firm tofu
1/2 tsp garlic powder
¼ cup nutritional yeast
1/4 teaspoon salt
½ teaspoon pepper
1 tablespoon parsley
1 teaspoon basil
1 teaspoon oregano
¼ cup lemon juice
¼ cup plant milk
5oz fresh spinach chopped into small pieces
Combine all of the above ingredients except for spinach in a food processor and process until fairly smooth. In a large bowl, add chopped spinach and tofu mixture. Fold together until combined.
Refrigerate until ready to use.

Cooking instructions for casserole:
1 box large shells cooked to manufacturers specifications
In an casserole dish, ladle out enough marinara to cover the entire bottom
Add two heaping tablespoons of ricotta/spinach mixture into each shell.
Lay stuffed shells out in the dish next to each other.
spoon the rest of the marinara on top of the shells
Cook in preheated oven at 375F for 25 minutes, until the sauce is bubbling.
Remove from heat, plate up and serve.
