How To make Barley Egg Rolls
1 1/2 ts Salt
1 c Medium barley
2 ts Grated fresh ginger OR
1/2 ts Ground ginger
3 tb Sesame Or vegetable oil
4 Scallions, sliced
1 Red pepper, chopped
1/2 lb Bok choy, shredded
1 tb Rice wine OR white wine
-vinegar 1 pk Prepared egg roll wrappers
-(16 oz.) Oil for frying In a saucepan bring 4 cups water and 1/2 teaspoon salt to boiling. Add barley; reduce heat, cover and simmer 45 minutes until barley is tender and water is absorbed. In skillet cook ginger in oil one minute. Add scallions and red pepper. Cook, stirring until vegetables are crisp-tender. Add shredded bok choy; cook one minute until wilted. Remove from heat. Stir in rice vinegar, 1 teaspoon salt and barley. For each roll, brush egg roll wrapper with 1 teaspoon water. Place scant 1/2 cup barley mixture horizontally across center of wrapper, leaving 2 inch border on all sides. Fold corner tightly over fillings, then overlap right and left corners. Roll up tightly to enclose filling. Repeat with remaining barley mixture and wrappers. In deep skillet heat 1 inch oil to 375 degrees F. Fry rolls in batches until golden and crisp, turning once. Barley Stir Fry | Healthy Eating | Kravings
And just like that, the holiday season has come to an end. After going on a calorie spree, most of us would like to shed a few holiday pounds. And healthy meals are easy to consume if they're packed with flavor.
In this recipe, I cooked and sauteed Barley with Turkey bacon and sausage, veggies and boiled egg. This is a very satisfying meal.
Here are the ingredients and steps to make this recipe!
Barley Stirfry
2.5 cups Barley
2 -3 tbsps of Olive Oil
1 cup Turkey Bacon
1 cup Chicken wieners
1/4 cup diced Onion and
1/4 cup sliced Spring Onions
2 cups diced Mushrooms
1 cup diced Red Peppers
1/2 cup diced Carrots
3 tbsps dark soya
2 tbsps Hot sauce
1 cup lightly steamed Broccoli
1/4 cup diced Parsley
1 boiled egg, diced
Soak the barley for 30 - 40 mins, wash drain and boil for 15 - 20 mins
Drain the barley and leave aside
In a saute pan heat some oil and add the turkey bacon and the sausages and cook and keep aside
In the same pan add the onion and spring onion
Add the mushroom and cook for a few minutes
Add the red peppers, carrots and saute
Add the cooked and drained barley and allow it to sit in the hot pan for a few minutes
Add the soya and hot sauce and mix in with the barley
Allow the barley to sit for a while before stirring so the barley gets a little caramelized
Add the broccoli, parsley and boiled egg
Mix well and serve

Shepherd's Egg Barley with Sausage and Potato (Pásztortarhonya)
This is an easy-to-make one-pot dish, is called “Pásztortarhonya” in Hungarian. Originally this was made in a cauldron/kettle on an open fire with these couple of ingredients the shepherds could carry in their bags.
“Tarhonya” (egg barley) is a simple pasta, made from flour, eggs and salt. It's commonly used in Hungary and in Central Europe. It's not from barley, just got its name from the shape. There are two versions of it: the one that I used in this recipe (like pinched or grated form) and there is a perfect tiny ball version of it. If you can't find “tarhonya” in your region, you can replace it with an Italian pasta, called: Acini de pepe. It's important that this Italian pasta need much less time (about 8-10 minutes) to cook, while the “tarhonya” requires 50-60 minutes.
Ingredients (serves for 4-6)
350 grams (about 12 oz) egg barley (tarhonya)
150 grams (about 5 oz) smoked Hungarian sausage sliced, not too thinly(you can replace it with choriozo)
100 grams (3.5 oz) smoked pork fatback with no meat/ bacon („szalonna”), cut into small cubes
1 large yellow onion, finely chopped
4 garlic cloves, minced
400 grams (14 oz) potatoes, peeled, diced and washed
1-1 tomato and wax pepper chopped (these are optional, you can leave them out)
1.5 tsps of salt
2 tsps of freshly ground black pepper
2-3 (or more) tsps of paprika
1.2 liter (5 cups) water /maybe need more during cooking/
Pickles for serving
1. Heat a large deep pan and add the bacon cubes. Stir, and cook on medium-low heat. It need some time until it releases the fat. Be careful not to burn it!
2. Now, it's time to add the egg barley (tarhonya). Stir, and cook on medium heat until it's golden brown. Tarhonya is always toasted some lard or oil before adding the water – it gives a characteristic flavor to it.
3. Add the slices sausage, stir and cook until it gets some color and releases its fat.
4. Next is the chopped onion and minced garlic. Stir everything together and cook for a couple of minutes (until the onion has softened a little)
5. Stir the chopped tomato and pepper in (if using), season with salt, pepper and paprika.
6. Add the diced potatoes, and give it a good stir.
7. Pour the water over, mix and bring it to a boil.
8. Cover. Lower the heat to low and cook it for about 50 minutes.
9. During cooking you can check if it needs more paprika or seasoning. Add some if needed.
10. When the 50 minutes is up, check the softness of the egg barley and the potatoes. Maybe you need to cook it for a little bit more. (add more water if needed)
11. Cook until all the water has been absorbed, and everything is nicely cooked.
12. It's ready to serve. Don't forget to serve it with some pickles (any kind you like)

Today I will share a very simple recipe but I bet you will be in love with it!
You can choose every type of filling for your egg roll!
For my filling I decide to use:
soft cheese
carrots
nuts
fresh basil
To prepare the roll you need
5 eggs
2 spoons of parmesan
Pinch of salt
