In episode 3 we visit the beautiful city of Bath, looking into the iconic Bath Buns. From the history, to recipes and different variations of the buns, including the Sally Lunn, we will be sure to get you in the baking bun zone!
Bath is known for being a UNESCO world heritage site, the backdrop to Bridgerton and of course the home of Bath Buns. Scott and Alice talk to local baking experts, visit one of the oldest tearooms in Bath.
After some great fact finding Scott and Alice head into the kitchen to have a go at making the Bath Bun themselves.

Bath Buns - Harry Potter
In this video we are making Bath Buns
Ingredients
1/4 cup warm water
2 1/4 teaspoons (one packet) active dry yeast
1 tablespoon granulated sugar
1/2 cup whole milk
2 tablespoons (1/4 stick) butter
2 1/2 cups all-purpose flour
6 tablespoons granulated sugar
1 teaspoon salt
2 large eggs, at room temperature
Grated zest of 1 lemon
Grated zest of 1 orange
3/4 cup dried currants or dried sweetened cranberries
1 teaspoon caraway seeds
1 egg beaten with 1 tablespoon water, for brushing over the buns
Turbinado sugar, for sprinkling (You can use Sugar in the Raw)

Throw the dough into boiling water and the result will surprise you!
Ingredients:
Milk 105ml
White sugar 12g/1tbsp
Active dry yeast 1.5g/½tsp
Olive oil 15ml/1tbsp
All-purpose or bread flour 150g
Salt 1.5g/¼tsp
Bake for 15 minutes at 400°F/205°C

Makes: 12 Bath Buns
Recipe Ingredients:
300g bread flour
138ml whole milk
38g caster sugar
45g white shorting / unsalted butter chopped into pieces
141g mixed fruit + mixed peel Opt
28ml egg beaten
21g fresh yeast
2g salt
2g best bread improver
7g mixed spice { best use is oil }
Best to use machine with 3 speed
Method
Combine the flour, sugar and salt in a bowl and work in the butter & rest of the ingredents. then add in the milk yeast, then bring together into a dough on 1st, now put onto 2nd speed for 8 minutes; total mix is 10 minutes in the mixer the last minute add in the mixed fruit with the peel
rest the dough for about 5 mins, then cut up into 12 parts & mould roll, roll out a small amount not like a bread bap, tray up the buns on a sheet of quick-release silicone paper with plenty of room between them for expansion. and wash with egg then add onto the tops rock sugar, prove for about 45 mins at 25c - 30c, until doubled in size again, oven needs to be put on after about 30 mins 200ºc, bake for 10 - 15 min until golden brown, Leave to cool on wire rack.
Bake in the oven for about 10 minutes at 200ºc
