BEEF CHOW FUN
1 Package Flat Rice Noodles
-------------------------------
5 oz inside round steak (Any pieces would do)
Marinate the steak into
-1 Tbls Soy Sauce
-1 Tsp Chinese Cooking Wine
2 Tbls Cornstarch
5 Tbls Water

2 Tbls Oyster Sauce
1 Tbls Dark Soy Sauce
1 Tbls Light Soy Sauce
2 Cups Bean Sprouts
3 Gai Lan Vegetable
2 Sprig onion
2 Sprig Garlic Chives

How to Cook Beef Chow Fun | Kenji's Cooking Show
This is how to cook beef chow fun if you've got a high-powered wok burner. I'll do a video on how to do it without one at some point as well.
Ingredients:
For the Beef:
6 ounces sirloin flap, flank steak, skirt steak, or hanger steak, thinly sliced against the grain
1/4 teaspoon baking soda
1 teaspoon light soy sauce
1 teaspoon dark soy sauce
1 teaspoon Shaoxing wine
1/2 teaspoon corn starch
For the Stir-Fry:
8 to 10 ounces fresh hor fun noodles (or 3 ounces dried wide rice noodles)
Neutral oil (such as rice bran, vegetable, or canola)
1/4 small yellow onion, sliced
3 cloves minced fresh garlic
3 scallions, cut into 2-inch segments
1 cup mung bean sprouts
1 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon Shaoxing wine
Pinch MSG
Pinch ground white pepper
1. Combine the beef, baking soda, soy sauces, wine, and corn starch in a small bowl and agressively massage it. Place in the refrigerator for at least 15 minutes, or preferably overnight.
2. Bring a pot of salted water to a boil. Add noodles and cook, stirring gently to break them up, until they are tender, about 1 minute (If using dry noodles, this will take a couple minutes). Drain, rinse under cool water, drain again, then toss with a couple teaspoons of oil to keep them separated.
2. Heat a cup of oil in wok over high heat until shimmering. Add beef and cook, stirring, until it is barely cooked through, about 30 seconds. Drain the oil and set the beef aside. Wipe out the wok.
3. Return the wok to high heat. Add a tablespoon of oil and swirl to coat. Add noodles and stir-fry over maximum heat until the noodles are lightly charred in spots, about 1 minute. Add a couple teaspoons of light and dark soy around the rim of the wok and toss to combine. Transfer to a bowl.
4. Return wok to high heat. Add a tablespoon of oil and swirl to coat. Add the onions, garlic, scallions, and bean sprouts and stir-fry until tender-crisp, about 20 seconds. Return noodles and beef to wok. Season with MSG, white pepper, wine, and remaining soy sauces. Toss to combine, being careful not to break the noodles. Transfer to a serving platter.

Serves 2
Ingredients
For the Beef
8 oz beef chuck, sliced into 1/4-inch thick (you can substitute to any cut of beef you prefer)
1 tsp light soy sauce
1 tsp shaoxing wine
1 tsp cornstarch
1/4 tsp baking soda
1/8 tsp white pepper (you can substitute to black pepper)
For the Sauce
1 Tbsp light soy sauce
1 Tbsp oyster sauce
1 Tbsp shaoxing wine
1/2 tsp dark soy sauce (optional, it’s for color)
1 1/2 tsp sugar
1/8 tsp white pepper (you can substitute to black pepper)
2 Tbsp water
For Stir Frying
2 Tbsp cooking oil (high smoke point oil recommended)
2 cloves garlic, chopped
1 oz ginger, chopped
10 oz fresh chow fun noodles (you can substitute to 5 oz wide dry rice noodles, please see the note), room temperature and separated
4 oz Chinese garlic chive or green onion, cut into 1 1/2-inch long pieces
4 oz beansprouts
1/2 tsp sesame seeds

Beef Chow Fun Recipe:
1/2 lb L size rice noodles
1/2 lb shaved beef (from trader joes)
2 teaspoons soy sauce
1 tablespoon oyster sauce
1 teaspoon cornstarch
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon thick soy sauce
1 teaspoon sugar
1/2 teaspoon black pepper powder
1 tablespoon water
a handful of bean sprouts
3 stalks green onions split between white and green
1 teaspoon ginger, minced
4 garlic cloves, minced
In a bowl, marinate the shaved beef or sliced sirloin with 2 teaspoons soy sauce, 1 tablespoon oyster sauce, and cornstarch. Marinate for 30 minutes.
In another bowl, mix remaining soy sauce, oyster sauce, thick soy sauce, sugar, black pepper powder, water and mix well. Set aside.
Prep the noodles if boiling from dried or cut from fresh. Drain and set aside if you're cooking from dried.
In a smoking hot wok, add oil and let stir fry the meat for a few minutes just until it's done. Let it sit for a minute until you touch it so it develops a nice crust. Remove from wok into a bowl and set aside.
Let the wok get hot again and add a little more oil. Add the white part of the green onions along with ginger and garlic and stir fry for a quick minute until fragrant. Add the noodles and stir fry with the sauce. Add a handful of bean sprouts, green onions and beef. Stir fry again for another minute and you're done!
