How To make Beef Salad Ole
3/4 c Pace Picante Sauce
2 tb Olive oil
2 tb Balsamic vinegar
-OR 1 tb Red wine vinegar
1/2 ts Dried oregano, crushed
1 Garlic clove, minced
3/4 lb Deli roast beef, sliced
-1/4" thick, cut into short, -thin strips 1 md Tomato, seeded and diced
1 md Cucumber, cut lengthwise
-into quarters, seeded and -thinly sliced 1 md Red or green bell pepper,
-or 1/2 each, cut into -short, thin strips 1 c Thinly sliced celery
1 c Short, thin red onion strips
Combine Pace Picante Sauce, oil, vinegar, oregano and garlic; mix well. Place beef in plastic bag; pour half of Pace Picante Sauce mixture into bag. Close bag securely; chill at least 1 hour or up to 12 hours. Just before serving, arrange meat and vegetables on serving platter. Pass remaining dressing and serve with additional Pace Picante Sauce.

INGREDIENTS:
*this serves quite a bit *
5 russet potatoes ( I used medium size )
1 cup mayo
1/4 cup mustard ( or more to taste)
3 tbs plus more sugar ( please adjust this to taste as well)
1 cup salad cubes or more or less to taste * I suggest starting out with half a cup and add more if you would like* you can also sub for 1/2 cup chopped gherkin pickles plus 1/4 cup sweet relish)
4 boiled eggs
chicken stock
2 tbs salt ( to boil eggs) and two tbs salt to boil potatoes)
black pepper
paprika for garnish

this is from Marcella hazans cookbook the essentials of classic Italian cooking I got it as a gift from my uncle about 20 years ago and this dish is always by go to because its so simple quick and delicious
ps i did call them noodles once but I do know better and am just bad with words.
