How to make Beet Kvass - A Probiotic Rich Fermented Drink made of BeetRoot for Good Gut Health
Homemade Beet Kvass is a plant based fermented drink or tonic drink that filled with loads of good beneficial bacteria (probiotics), digestive enzymes, vitamins and many beneficial compounds.
It is famous for its cleansing and detox properties. This is an ancient digestive tonic. Vey refreshing and simple to make.
Probiotic bacteria naturally found on the beet skins undergoes lacto-fermentation.
All you need is some beetroots, salt & water.
INGREDIENTS:
1. Beetroot - 2 medium size/250gms
2. Water - around 700ml

BONUS TIPS:
1. Don't add lesser salt else fermentation won't start.
2. Make sure to use an Air-tight container else fungus will form and will spoil it.
3. Use either Sea salt or Himalayan pink salt for good fermentation.
4. best temperature for good fermentation is room temperature.
a. Hot / Normal weather at your place: Keep it on the kitchen counter
b. Winter (don't have an oven): Cover it with a comforter/blanket.
c. winter (have an oven): Keep it in the oven with its light on.
5. Release pressure from the jar (every 24 hours) by opening the lid, else it will be very difficult for you to open the lid (you might end up making a hole on the lid to open it)
6. When you see many bubbles on the top surface of kvass - INDICATES that fermentation has begun.
7. After 3 days when tasty changes to earthy, slightly salty, and subtly sour flavor then its ready to enjoy
8. Include this in your daily routine to get all the benefits.

Kvass | Recipe for kvass | Ievgen Klopotenko - Chef from Ukraine
In Ukraine, we drink Kvass to cool down when it is hot outside. This refreshing drink is very popular in our country. Perhaps you hear about it for the first time, but you'll be amazed by its taste. It's time to share this recipe so you can make Kvass at home. Trust me, it is very easy to cook it. You need only a few ingredients and a little bit of curiosity. I will teach you how to cook it, click on the video.
Ingredients:
200 g of brown bread
3 tbsp of sugar
1 g of live yeast
1-1.5 liters of water.
Dice brown bread. Dry it in a pan without oil until it gets a firm crust.
Cut 2 g of fresh yeast. For the preparation of kvass, I recommend using only fresh yeast.
Crush the yeast with your hands in a small bowl. The more you grind the yeast, the better it will dissolve.
Add 100 ml of water and 2 tbsp. sugar to the yeast. Stir until the sugar is completely dissolved.
Place the bread cubes to a three-liter jar with a screw cap. Pour the water with the yeast and the remaining sugar. Then add water to the top of the jars, mix slightly.
Cover tightly and leave to ferment in a warm place for 1-4 days. The longer you can withstand the kvass, the richer and sharper its taste will be.
Strain the kvass carefully into a clean bowl. Immediately pour it into jars with lids and place in the fridge. Homemade kvass can be stored in the fridge for up to 10 days.
