How To make Bene Wafers
1/4 c White sesame seeds
2 tb Black sesame seeds
1 c All purpose flour
1/4 ts Celery salt
1 1/2 ts Cayenne pepper
1 pn Chili powder
1/4 c Butter
Chilled and cut into pieces 1 tb Water
1 tb Buttermilk
Place white and black sesame seeds on a sheet tray, place in oven for about 10 minutes until lightly toasted 810 minutes or until lightly golden, remove from oven and let cool. In a bowl place flour, celery salt, cayenne pepper, chili powder and butter in a bowl. Work with fingers until the mixture resembles a coarse meal. Add the seeds, water and buttermilk . Mix until the dough is smooth. Roll the dough out on a flavored surface about 1/8 to 1/4 inch thick cut into 3/4 to 1 inch rounds. Place on an ungreased baking sheet. Bake at 350 degrees for 1012 minutes, let cool. Can serve as a crouton CHEF CYNTHIA LONG SHOW #DJ 9214 -----

Vanilla wafers are under-appreciated — not only are they a classic cookie, but the rich, buttery cookie that’s just bursting with yummy vanilla also goes with so many desserts! You can’t have my Creamy Banana Pudding without a crisp nilla wafer, or my 15 Minute Banana Cream Pie (No Bake). And, you can also use nilla wafers in my Homemade Strawberry Shortcake Bars! Honestly, for such a simple cookie, the sky’s the limit, so think out of the box (the prepackaged cookie box, specifically).
Homemade vanilla wafers are super easy to make, and they’re so much more flavorful than the kind you can pick up at the store. This nilla wafer recipe also earns bonus points because the cookies keep really well, so you can make them in advance for any of your nilla needs.

Ingredients
► Wafer Batter
• 120g flour
• 60g cornstarch
• 35g powdered sugar
• 1 1/2 tsp baking powder
• 2g salt
• 115g melted butter
• 160ml water
• 10ml vanilla extract
►Chocolate Icing
• 55g Butter
•125g Powdered sugar
• 50g Cocoa powder
• 30ml Milk
The instructions
◇Step 1 Wafer Batter
1. Place flour, cornstarch, powdered sugar, baking powder and salt in a food processor
2. Pulse
3. Pour slowly melted butter, water and vanilla extract in the food processor
4. when it is homogeneous it is ready for the first bake
◇Step 2 Baking
1. Place batter on your waffle cone machine
2. Bake about 2 minutes
3. Take off the heat
4. Cut your wafers into a rectangle
5. Bake another batch
6. Use the first rectangle as a template to cut the next ones
7. Place the rectangles on a baking sheet
8. Place another one on top to keep the from curving
9. Bake in the oven at 300°F for about 10 minutes
10. Take out to cool down
◇Step 3 Chocolate Filling & Assembly
1. Cream butter, powdered sugar and cocoa powder together
2. Add the milk
3. Adjust quantities of milk or sugar to get the right consistency
4. Find 4 wafers with about the same size
5. Add a thin layer of icing on the first wafer
6. Add another one and press
7. Repeat until you have 4 layers of wafer
8. Place in the fridge until the icing hardens
