Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Dried Fruit and Nut Loaf. This loaf is a cake with lots of dried fruits (raisins, dried cranberries, dried cherries, dates, figs, prunes, and apricots) and nuts (walnuts, pecans, almonds, and/or hazelnuts) with just enough batter to hold it all together. What I also love about this cake is that it does not call for butter or even oil, instead, the ingredients are bound together with flour and beaten eggs.

This Vegan Meatloaf has the best taste & texture! This easy lentil loaf recipe is the perfect vegetarian meal for Thanksgiving, or any other holiday. You can make it up to 3 days in advance, but I recommend cooking it the same day you plan on serving for the best texture. Use canned lentils to save yourself some time, too!

This is my really simple vegetarian nut roast recipe. I make it a lot because it's so easy and it's just storecupboard ingredients. You can use yeast extract if you don't have marmite and you can use any bread to make the breadcrumbs. You can make it in advance and cook when you're ready and it also re-heats really well.

Serves 3 to 4.
1. Blitz 1 slice of wholemeal bread into breadcrumbs in a food processor.
2. Add the following into the processor alongside the breadcrumbs: 2 small onions, 70g cheddar cheese, 200g unsalted nuts and 2 slightly heaped tsp marmite.
3. Blitz it all!
4. Transfer into a small lined baking dish.
5. Cook on a 190'C fan oven for 20 to 22 minutes until lightly golden.

Welcome to Bonita's Kitchen! Today we will be making NUT LOAF.
Made with crushed walnuts, all-purpose white and whole wheat flour......This is another tasty recipe of my Aunt Clara's and I can't wait for you to make it.

Ingredients:
3 cups all-purpose flour 1 cup water
½ tsp sea salt ½ cup milk
1½ cup crusted walnuts 4 tsp baking powder
1 large egg 1 tsp almond extract
1/3 cup oil ¾ cup sugar
Method:
In a bowl sift all dry ingredient’s, add crusted walnuts, keeping a few for the top. In a small bowl crack egg, add water, milk, oil and almond extract, whisk well.
Then add to dry ingredient’s and blend well together until smooth.
Grease bread pan or pan of choice, add a piece of parchment paper in pan and scoop batter in pan and top with extra crusted walnuts. “ Aunt Clara would use Almonds sometimes for the top”
Preheat oven of 350ºF for 45 to 60 minutes, or toothpick clean and golden brown.
Remove from oven and let come to room temperature before cutting.
Bonita’s Tips:
I used 1 cup All-purpose whole wheat flour and 2 cups All-purpose white flour
Sifting flour gives it a cake like flour texture.
You can add vanilla if you don’t like almond extract.
Putting parchment paper in pan, makes them easier to remove from pan, and stops from burning the loaf.
