How To make Blini with Three Caviars
2 1/2 tb Sugar
2 c Milk
2 tb Unsalted butter, melted,
Plus additional for brushing -the griddle 1 c Buckwheat flour (available
-at natural foods stores and Specialty foods shops) 1 c All-purpose flour
1 ts Salt
2 lg Eggs, separated
3/4 c Well-chilled heavy cream
(Buckwheat Yeast Pancakes With Three Caviars) from 1989 a 1/4-ounce package (2 1/2 teaspoons) active dry yeast about 2 cups sour cream as an accompaniment about 4 ounces each black caviar, golden caviar, and salmon roe In a large bowl proof the yeast with 1/2 tablespoon of the sugar in 1/3 cup lukewarm water for 10 minutes, or until it is foamy. Stir in 1 cup of the milk, heated to lukewarm, the remaining 2 tablespoons sugar, 2 tablespoons of the butter, and the buckwheat flour, beat the batter for 1 minute, and let it rise, covered with plastic wrap, in a warm place for 2 hours or chill it, covered tightly, overnight. (Chilling overnight produces a tangier flavor. Let the batter come to room temperature before continuing with the recipe.) Stir in the remaining 1 cup milk, heated to lukewarm, the all-purpose flour, the salt, and the yolks, beat the mixture for 1 minute, and let it rise, covered with the plastic wrap, in a warm place for 1 hour, or until it is double in bulk and bubbly. In a bowl beat the cream until it holds soft peaks and fold it into the batter. In a metal bowl beat the egg whites until they just hold stiff peaks and fold them into the batter gently but thoroughly. Heat a griddle or large skillet over moderate heat until it is hot, brush it lightly with the additional melted butter, and spoon tablespoons of the batter onto the griddle, spreading them to form 3-inch rounds. Cook the blini for 1 minute on each side, or until the undersides are golden. Transfer the blini as they are cooked to a platter and keep them warm, covered with a kitchen towel. Make blini with the remaining batter in the same manner, brushing the griddle lightly with the butter as necessary. The blini may be made 2 days in advance and kept covered and chilled. Reheat the blini, covered with foil, in a 350~ F. oven for 10 to 15 minutes, or until they are warm, or microwave them on a microwave-safe platter, covered with microwave-safe plastic wrap, at high power (100%) for 2 minutes, or until they are warm. Arrange 3 or 4 blini on each of 18 small plates, top them with some of the sour cream, and arrange some of the caviar decoratively on the sour cream. Serves 18 with blini to spare. Blue Crab Blini with Caviar
3 Cups Flour
2¼ Teaspoons Salt
1 Tablespoon Sugar
1½ Teaspoons Baking Powder
2 Cups Milk
3 Eggs
3 Tablespoons Butter, Unsalted and Melted
1 Pound Blue Crab
2 Tablespoons Olive Oil
Garnish
1 Cups Crème Fraîche or Sour Cream
½ Bunch Chives, Sliced Thin
2 Tablespoons Sterling Caviar
Method:
1. Stabilize your grill at 450F. Set up for direct grilling and insert a soap stone or cast-iron griddle surface on your grill.
2. Combine all dry ingredients in a bowl and combine.
3. In a second bowl, combine your wet ingredients. Whip to fully incorporate.
4. Form a well in your dry ingredients and slowly pour the wet into the dry, whipping to incorporate the two.
5. Now that the batter is made, gently fold in the crab meat. Be sure not to over whip; it is nice to see small chunks of crab meat in the batter.
6. Oil the soap stone or cast-iron griddle surface and place a small amount of batter, roughly 2 tablespoons, on the surface Cook for 45 seconds. Once you start to see small bubbles in the batter, flip and cook for another 45 seconds. Remove the first pancake or blini and taste. This is your tester, so adjust the seasoning to your liking if needed.
7. Oil the surface again and continue to make as many blinis as you like, using the back of a spoon to draw them out as soon as they hit the hot surface to ensure they are thin.
8. Transfer them to a presentation platter and garnish each blue crab blini with a dash of crème fraîche, dash of caviar and minced chives. Enjoy!

Amazing FRENCH blinis in a 30s recipe by Cakes and Tips
The BEST Blinis, super easy with all the tips.
Originally Russian pancakes, this is a French recipe.
I use NORMAL strong bread flour but you can do a mix of 30% Buckwheat + 70% normal strong bread flours.
Ingredients:
For 10 blini
Melted unsalted butter: 60g / ¼ cup
Strong bread flour: 250g / 1 cup + ½ cup + 1 tbsp
Lukewarm milk: 300ml / 1 cup + ¼ cup (20 Celsius / 70F) to melt the yeast
Fresh yeast: 15g / 1 Tbsp + 1 tsp OR Dry yeast: 5g / 1 tsp
2 eggs
Caster sugar: 15g / 1 tbsp + 1 tsp
Salt: 5g / 1 tsp
Neutral oil: 15g / 1 tbsp
The pan has to be piping hot and lightly greased with oil or butter.
After the pan has heated, I put my hob on strength 5 out of 9.
I cook each side for 2 to 3 minutes.
