How To make Blueberry Meringue Pie
Mary Bowles DNSR31A 1 qt Blueberries
1/2 c Sugar
1/3 c Cornstarch
1 c Water
2 tb Lemon Juice
1 Baked 9-inch Pastry
2 Egg Whites
1/4 c Sugar
Wash berries; crush 1 cup of them, reserving remainder. Blend 1/2 cuup sugar and cornstarch. Add crushed berries and water, and cook slowly, stirring constantly, until mixture thickens and bubbles. Remove from heat; add lemon juice and reserved whole berries. Pour into baked pie shell. Beat egg whites until foamy; add sugar, a tablespoon at a time, and continue beating until meringue stands in stiff peaks. Spoon meringue over top of hot filling, pressing against inner edge of crust to seal. Bake at 350 degrees for 15 to 20 minutes or until meringue in lightly tipped
with a golden brown. Cool before serving. Today’s yummy adventure features mini blueberry meringue pies for Pi Day! These feature my homemade pie crust (recipe provided below), a blueberry curd, and toasted meringue! While I still have some adjustments to make with the blueberry curd, it was still a tasty treat! This is one of the best pies I have had so good . You will enjoy this yummy pie recipe. the Italian Meringue is Part 2 Tomorrow Enjoy.
For pie
-1 Pie shell
-2 Lbs Fresh blue berries
-1/2 Cup water
-1/2 Cup Honey
-Juice 1/2 Lemon
-1 shot of Rum
-2 Tbsp. Corn starch slurry
-1 Package of Gelatin. Bloom with a 1/4 Cup water
For Meringue
-227g of Sugar.
-5 Medium eggs white 132g.
-113g of water.
-1 tsp of Vanilla.
-1/2 tsp. of Cream of Tartar.
Put egg white in stand mixer with cream of tartar.
Make sure your eggs are at room temp. Make sure stand mixer is cleaned with a little lemon juice. As the smallest amount of fat will hurt your fluffy Meringue. Put egg whites in stand mixer with cream of tartar. In a small sauce pot. Add water and sugar bring to a boil. Sugar has to be at 240 f . Start your mixer when sugar hits about . 210 f. Beat egg whites till a bit fluffy. once sugar is at 240 f. slowly pour in drizzle on the side of the bowl beat on higher speed till soft peaks appear . This takes between 8-10 mins. You want to beat till bowl is at room temp. When you lift wire whisk.should be thick enough to stand up be it self. That's the perfect Italian Meringue.

Ingredients:
Recipe for blueberry filling:
3 to 4 cups fresh or frozen blueberries ½ cup sugar
4 tbsp cornstarch ¼ cup water
Ingredient’s for Meringue:
2 egg, whites ½ cup, white sugar ½ tsp, cold water ½ tsp cream of tartar (optional)
PASTRY
Ingredients for pastry:
2 cups white or wheat flour ½ cup cold unsalted butter
½ tsp sea salt ½ cup cold water
Method for blueberry filling:
In a saucepan add your fresh or frozen blueberries, no need to thaw. Toss in sugar, cornstarch and water.
Start cooking on a minute heat and stir until thicken, then pour in a bowl or mason jar. Then let it come to room temperature and refrigerate. ( Make the day before or morning of making the pie.)
Method for meringue:
In a small glass bowl with a high speed mixer pour room temperature egg whites in bowl and start mixing.
When soft peeks start to form add ½ tsp cold water, then slowly add sugar and cream of tartar, continue mixing until all sugar is dissolved and stiff peeks are formed. Add to pie when ready to do so!
Method for pastry:
Mix flour, butter (chop in pieces) and sea salt together in bowl mix with your hand or mixer with hook, add water mix with fork until it crumbles then shape into a ball with your hand, then remove from bowl.
Put on the counter top and sprinkle with flour, then cut the ball into two pieces. Using a rolling pin or bottle, roll your pastry ball until all even to fit a pie pan.
Keep one piece full and roll the other for another time.… or make another pie!!!
Next grease your pie pan, add the pastry in pan, preheat oven to 375ºF and bake for 15 to 20 minutes or until golden brown.
Then add the COLD blueberry mixture on top of the baked pie crust. Then top with meringue and spread over blueberry filling.
Preheat oven to 400ºF, after bake meringue for 5 to 10 minutes or until golden brown. Remove from oven and let come to total room temperature, before cooling in the fridge overnight. Enjoy!
