Breakfast Sausage Casserole

Ingredients
Butter, for greasing
1/2 loaf of sliced white loaf bread
1 pound fresh bulk pork sausage with sage
10 ounces sharp Cheddar, grated
2 cups half-and-half
1 teaspoon dry mustard
1 teaspoon salt
5 large eggs, lightly beaten
Directions
Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
The next day, preheat the oven to 350 degrees F.
Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

Bake temp: 380 degrees (F) for 15 to 20 minutes
Ingredients
Oil
1 1/2 Tbs butter
8 eggs + 1/2 cup heavy whipping cream (salt pepper to taste)
8 oz of chorizo of choice + 2 medium potatoes
11 Corn tortillas
1/2 8oz can tomato sauce
3/4 cup water
2 tomatoes
2 medium Anaheim pepper or can of Hatch green chili
1/2 chopped white onion
2 garlic cloves
1 tsp chicken bouillon (salt pepper to taste)
1 can pinto beans
3 cups of cheese (mozzarella + Mexican cheese blend)
If you refrigerated your casserole for next day use
Bake at 350 degrees
Cover with foil and bake for 30 minutes- then remove foil and continue to bake for another 15 to 20 minutes, until you see all cheese has melted, you know the bubbling.

How to Make Hash Browns - Diner Style Restaurant Hashbrown Recipe
Learn how to make crispy hashbrowns just like you get at a diner! These are super simple and only require a real potato, butter, oil and a technique. That's it. Enjoy!
For one serving of hash browns:
1 (4-5 ounce or 110-140 grams) russet potato
2 Tbsp vegetable oil
1/2 Tbsp butter or margarine
Wash and peel the potato. Grate or shred on a box grater or food processor. Do so into a bowl of water to prevent oxidation. Drain and rinse until water runs clear. Spread shredded potato out onto paper towels or a clean kitchen towel. Pat dry and let air dry for 5-10 minutes. In a small frying pan, add oil and butter. Heat over medium-medium high heat. When butter solids start to brown, add shredded potatoes. Cover with a lid and cook for 5 minutes without lifting the lid. When time is up, remove lid, season with salt and pepper and flip. Continue cooking for an additional 1-2 minutes. Makes 1 serving of hashbrowns. Enjoy!

Plus, it’s hands-off as you don’t have to flip the bread in the pan, making it a lot easier to feed a crowd.

BreakFast In A Lumpia Wrapper (Make It Your Way)
Breakfast Lumpia Rolls
50 individual lumpia wrappers
2 lbs. Jimmy Dean sausage
1 1b. hickory smoked bacon
1 sweet onion (Finely chopped)
4 red potatoes (small diced)
4 garlic cloves (minced)
8 eggs, large
1 lb. cheese, sharp, cheddar (shredded)
sea salt (to taste)
black pepper (to taste)
Directions:
1. Brown the ground sausage over medium heat until it’s slightly pink, drain the grease, then add potatoes. Continue to cook for about 3-4 minutes. Then add onion, garlic, salt, and black pepper. Mix and continue to cook for 3-4 minutes.
2. Turn off the heat and allow the mixture to completely chill before adding cheese.
3. Begin wrapping the breakfast lumpia, you may cook these right after you make them, or you can freeze them and prepare them as needed.
NOTE: If you freeze them, allow them to thaw before frying because they are bigger than your average lumpia.
