How To make Breakfast Burritos
1/2 lb Ground Beef
1 sm Onion chopped
1/2 sm Green bell pepper
1/2 ts Salt
1 ts Ground black pepper
1/2 ts Ground cumin
2 c Potato Par boiled diced
4 Eggs
9 Flour tortillas
1/2 c Shredded cheddar cheese
Brown the ground beef with the onions. Drain the fat, then add the spices and diced potatoes. Whisk the eggs and milk slightly. Add to beef/potato mixture over a medium high high. Mix together as in scrambled eggs. Warm flour tortillas on a hot griddle. Put egg/beef mixture on warmed tortilla and sprinkle with shredded cheddar cheese. Fold the tortilla making a burrito. Serve with salsa of your choice.

- 1 Flour Tortilla Wrap
- Avocado Oil Spray

1. Start Off By Scrambling 2 Eggs And Cube Up 1/4 Of The Ham Steak
2. Heat Up A Medium Pan And Begin To Get Some Color On The Ham.
3. Once Nicely Browned, Pour In Eggs And Scramble. Add Salt And Pepper To Taste.
4. Wrap The Eggs And Ham In A Tortilla Then Crisp Up In The Pan
5. Wrap Up And Take With You On The Go Or Enjoy Right Away!!

Breakfast Burrito Recipe:
3 1/2 lbs (1.6 kg) Yukon gold potatoes peeled diced and parboiled
1 lb (0.45kg) bacon cut into chunks and rendered
Flour Tortilla recipe Americans:
13.2 ounces ap flour
1/4 tsp baking powder
1 1/4 tsp sea salt (Maldon)
2.8 ounces butter
3.2 ounces whole milk
4 ounces water
Flour Tortilla recipe Rest of World:
375 grams of all-purpose flour
1.25 grams of baking powder
6.5 grams sea salt (Maldon
80 grams of butter or animal fat
90 grams of whole milk
115 grams water
Tomatillo salsa:
6 tomatillos boiled for 5 mins in salty water
1/4 onion
3-4 garlic cloves
1/2 avocado
I tsp salt
1/2 bunch cilantro
2 limes juiced
1 tbsp avocado oil
Jalapeño for spice(optional)
Peri-Peri Salsa:
6 large garlic cloves smashed and roughly chopped
3 Medium shallots rough chopped
5 Fresno chilis rough chopped
1 tsp kosher salt
1 tbsp paprika
15 cherry or grape tomatoes
2 tbsp chopped cilantro
1 1/2 lime juiced
2 tbsp avocado oil

▪1lb/.5kg Frozen tater tots
▪1lb/.5kg thick cut bacon, cut into bite size pieces
▪230g/1c water
▪1 15oz/440g can pinto beans, drained
▪1 16oz/450g can refried pinto beans
▪Salt
▪Black pepper
▪2-3g or 1t cumin
▪1 lime
▪10 large eggs
▪125g or 1/2c heavy cream
▪Spicy chipotle ranch (recipe below)
▪Large 10”/25cm tortillas
▪Oaxaca cheese, grated (sub with chihuahua or pepper jack)
▪Smashed avocado (roughly combine 2 avos with pinch of salt and squeeze of lime)
▪Cilantro, chopped
▪Cotija cheese
TOMATILLO SALSA
▪100g or 4 small-med jalapeno, chopped
▪10g or 3-4 cloves garlic, chopped
▪100g or 1 small white onion, chopped
▪400g or 4-6 whole ripe tomatillos, chopped
▪400g or 1 2/3c water
▪10g or a handful of cilantro
▪Large pinch of salt
