Makes - 5 Burritos
Ingredients -
2 tsp (10ml) - Olive Oil
3 - All-Rounder Potatoes, Finely Diced
4 - Chorizo Sausages, Diced
10 - Whole Eggs
100g (3.5oz) - Cheddar Cheese, Freshly Grated
1 - Avocado, Thinly Sliced
5 - Soft Tortillas
Seasoning To Taste
Sauce Of Choice To Serve

???? The chile puya is less spicy than chile árbol, if you want it more spicy use chile árbol instead, also you can use chile jalapeños if you don’t want your salsa to be spicy!
Ingredients:
10 eggs
Large flour tortillas
Queso fresco
Refried beans
Avocado
Breakfast potatoes:
20 small baby potatoes cut into bite size pieces
4 tbsp oil
1 tsp garlic salt
1 tsp seasoned salt(25% less sodium)
1 tsp black pepper
1 tsp smoked paprika
Egg sauce:
2 tsp oil
1/2 white onion sliced
6 roma tomatoes
3 garlic cloves
Chile serrano I used 4
Chile puya I used 5
1/4 cup water
Salt and pepper

Start your day off right with tasty breakfast burritos. Filled with savory cooked meat, crispy hash browns, fluffy eggs, and topped with our magical homemade sauce, you’ll want to eat one every single morning!

✅Ingredients
• 4 tablespoons salted butter
• 20 ounces frozen diced or shredded hash browns, thawed
• 1 pound ground sausage
• 8 ounces ham, diced
• 1 white or yellow onion, diced
• 1 red bell pepper, diced
• 4 ounces diced green chiles, drained (optional)
• 10 large eggs
• 1 teaspoon salt, divided
• 1 teaspoon black pepper, divided
• 2 cups shredded cheddar cheese
• 12 tortillas
Burrito Sauce:
• 1/2 cup mayonnaise or sour cream
• 1/4 cup hot sauce
• 1 tablespoon lime juice
• 1/2 teaspoon cumin
• 1/2 teaspoon chili powder
• 1/2 teaspoon garlic powder
✅Instructions
1️⃣ In a large skillet, heat butter over medium high heat. Cook thawed hash browns in the hot butter seasoned with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Flip minimally to ensure browning. Once cooked set aside and wipe out pan.
2️⃣ In the skillet, add in ground sausage and brown for about 5 minutes. Then add in ham, onion, and bell peppers. Let brown for an additional 6-8 minutes.
3️⃣ Add in green chiles and eggs. Stir and cook for about 5 more minutes until eggs are thoroughly cooked and fluffy. Add in cooked hashbrowns and season with salt and pepper.
4️⃣ Smear about 1 teaspoon of burrito sauce on the tortilla, Add about 1/2- 3/4 cup of the filling, then sprinkle with cheese and wrap up tightly.
5️⃣ Serve hot with salsa or favorite hot sauce!
Sauce:
1️⃣ Add all ingredients into a bowl and stir until well combined.
Freezing Instructions:
Wrap each burrito in foil. Transfer burritos in single layer to bag; remove as much air as possible, and freeze up to 3 months.
Reheating Instructions:
Remove burrito from foil and wrap in lightly dampened paper towel. Place on microwavable plate; microwave uncovered on high for 2 minutes 30 seconds - 4 minutes 30 seconds, turning once, until heated through.
Can also reheat in a skillet with a bit of hot oil or butter. Low heat until heated through and tortilla is lightly browned.
Air Fryer Instructions:
Air fry @ 350 degrees Fahrenheit for 5 minutes if thawed, 8-10 minutes if frozen.
